Scrumbia = "Pont Euxin's Shad", (Alosa immaculata or Alosa pontica), also called Black Sea Shad. Do not confuse this shad with herring or sea scabbardfish. They are different species.

That was well worth watching, warriors, time well spent. You gave us a good picture of what the dishes were and the ingredients and processes involved and kept us amused all the while and showed us you were really interested and that the dishes very much impressed you. Chef Daniel was also very committed and could have his own show, I feel. In the session before this some of the ladies here were admiring the boyish good looks of the young assistant (I won't tell you who they were exactly). He was probably an apprentice as he did look very young. Steve, no drinks? The bar hadn't opened yet? Someone here suggested a dryish white wine to go with the fish. Sounds right to me. Thanks a lot. It was a real pleasure.

Steve, what this chef is cooking is called ciorba (every dish that is soured with anything else diffrent than bors). The dish soured with bors is called bors. And the dish that in the end remains sweet is called soup 😊 Enjoy your stay in Danube Delta 😊

@FIFA07Pro does not have any relationship with the taste sweet like sweet as a cake. Is just the term used to define a soup (sometimes is good to read between the lines😉)! That does not mean that the soup is not salty or spicy (sometimes the amount of pepper is so high that you can feel the pepper sooo well). And, depending in which part of the country do you live, vinegar can be the common/most used way to sour a ciorba!

Borsch is a Russian soup made with beet. The Romanian bors is a fermented liquid made from wheat bran, with some maize, lovage leaves and is used for souring soups. In the south those are all called ciorba. Moldova region has this distinction between bors and ciorba.

Greetings from Romania! I've been watching your videos lately and really enjoy experiencing the cultura through you guys! So you probably already know this, but in case you dont...there's the annual "Anonimul" independent film festival, held in August in Sfantul Gheorghe, so I was excited to see you've been there. This year will mark my 10'th time going there, all consecutive and the festival will also have it's "20 year birthday". It's basically movies at night, replays during the day in cinema halls and in the meanwhile there's alot of activities to do around (boat trips, kayak/canoe, beach, traditional meals etc). And in the same time period there's also the Perseids meteor shower that is just awesome at night. Maybe I'll see you there sometime!

You are not alowed to fish/catch that fish in Romania it's illegal, Nisetru is an endangered species, if it's really local fish and not farmed fish is a bad bad bad thing !

Scrumbie it's not makerell.The name for Scrumbie it's Pontic Shad (Alosa immaculata) . It is related to sardines and herring. It is a unique fish which you can only find in the black sea and sea of azov. If you eat the fish from black sea it is as tasty as a herring. The pontic shad migrates on the river like the trout. It goes on the Danube to spawn and then the magic begins when it's gaining fat and acquires that taste after changing to freshwater. The population it's getting lower and lower each year because of excessive fishing and the numerous dams witch are restricting their migration.

The reason for which your tripe soup, in one of your previous videos, didn't turn out as expected was due to the fact that you poured the sour cream directly on the hot soup. Instead, you should've add soup bit by bit in the sour cream and then add the mixture to the pot , just like the chef is doing at 6:18. Otherwise, the soup will not become homogenous and the cream will separate from the liquid. Cheers for the video, very nice!

Scrumbie is a sort of Atlantic Mackerel. It is very bony and oily soft meat when fished in the Danube. It is an acquired taste. Best with lemon and garlic sauce "mujdei".

Yo Steve I still remember your episode from Bucharest when you asked that girl from the cold cuts place “what cheese goes with cerb” (elk). 🤣. The soup looked good so did the BBQ because they have fresh seafood unlike in the west where most seafood ends up refrigerated and not cooked for days

The Sturion is illegal to catch in Romania, it's a protected species, they have the right of catching this fish only if they have a licensed sturion farm.

The soup/ciorba/borș of fish looks unfamiliar being so white from that much sour cream, but maybe a very local recipe. Anyway, cool video and btw, lovage is a must for most, if not all, ciorbe ;) :D If you travel more east, to Ukraine and Russia, you will encounter more and more sour soups, but named only ”borscht” which is not the same thing as the romanian souring ingredient. the lemon is there to help with the fatty fish, I dont really like to eat fish with lemon juice unless it's really really fatty, for the fish you had I would probably eat as it is. As for the skin from what I see they descaled it and there is a lot of flavor in the skin. You would probably not eat the skin if the scales would still be on and maybe fired on salt

As someone who lived in Romania for 5 years as an expat and wants to go back.... I'm super jealous. Ciorba, freshly caught/cooked fish with some grilled vegetables. I'd eat 10 plates. I'm eyeing a house six kilometers away from the Danube, but close to the Serbian border further North. Some day I will return to Romania, hopefully it is very soon.

A ciorba/borsch without some leustean (lovage) is like a bird with only 1 wing. But you must be careful on adding lovage ,not to add to much becuz it makes the ciorba bitter. Same as you, i dont like the strong fish flavour but i still enjoy fish dishes, there fishes and fishes, some are smelling more than others but also depends on cooking recipe. There is also salmon which doesnt smell so hard but there are no traditional/old recipes with salmon from what i know and salmon is expensive. Replacing the type of fish in a recipe can be a matter of personal taste or personal budget. Scrumbia and sturgeon are still expensive fish for the minimum wage workers here in Romania or for average population . Despite the fact that Romania has rivers and Danube and the Black Sea, the fish is not consumed yet as it should be (at homes not in restaurants), I mean there are countries around us which are consuming fish more than us.I would say the prices is one of the major if not the biggest reason why. As i said previously in a comment on another video, the food in Romania is quite expensive in terms of a percent from salary to spend. Were not producing and growing enough to cover the population needs so we import a lot, even the garlic and surprisingly imported food is cheaper than the own growing one. Big like from me, im happy you enjoy the countryside of Romania.

Keep in mind that lovage it's a must in most of this kind of sour soups. This herb has a unique flavour and unfortunately there is no substitute for it.
