If you try making candy again, please get some heat gloves! At those temperatures it's really dangerous and even a drop can burn you really quickly. I work with isomalt at work that's workable at lower temperatures and even that has left me with a couple of scald marks where a hot string of sugar has touched my arms above the gloves.

Yeah, I was thinking that too. First time I made candy as a teen I got a drop just where the glove ends; still have the burn mark.

@@dicebreaker I keep trying to figure out how to make dice shaped Rock Candy. Molding rock candy though. The issue is that Rock Candy is a crystalline solid. It's made by using sugar water as a crystal growing solution. In fact not all recipes heat the solution. Here's an example: kzitem.info/news/bejne/wqCommt8emiElKg I keep trying to figure out ways to get it to crystallize inside molds ands keep coming to the conclusion you'd need to carve the solid sugar after crystallization. Even if you can't make dice that way, it'd make crystal gem playing pieces.

New D&D monster- Black Licorice Candy Pudding- causes 3d6 burning damage and on a 18-20 sticks to the player, causing 2d4+4 damage/turn for d3+1 turns. If the monster rolls a critical failure to hit it falls to the ground as a solid mass, becoming extremely vulnerable to blunt weapon damage and upon death a very sweet tasting food item. Nice job bouncing back Alex... P.S. a great way to clean a burnt pot is to add some liquid dish soap and water and put the pot on to a low simmer, scraping the pot with a wooden spoon to loosen any large clumps. Add a bit of cold water to make it cool enough to wash out. Simmering the burnt pot makes the stuff that burned much easier to clean out...

Hey if you do this again, or any sugar work, there's a tip for cleaning your pan. If you just add a load of water back to the pan (once your poured as much of the syrup out as you can) and bring it to the boil and stir it it should just melt the remaining sugar into the water and then you can get rid of it. :)

It can also be handy to calibrate cooking thermometers: Glass of water with a lot of ice in it, leave it to settle, then put your thermometer in. It should read 0. Boil some water and put your thermometer in. It should read 100. You dont necessarily have to buy a more fancy thermometer if it doesnt match up, you can just remember to compensate for any differences. (Unless its out by ten or twenty degrees...)

Do you realise how dangerous molten sugar is, I was wincing when you were pouring that bubbling mix into the funnel with no protection. It's hotter than boiling water and is sticky. Glad you didn't have an accident though.

@@dicebreaker yeah heating sugar over a certain temp causes it to carbonize. That's why version 1 turned black. It's bubbling because as the Sugar carbonizes the oxygen and hydrogen in the sugar evaporates. You're basically turning it into charcoal. Because that's all that's left after the oxygen and hydrogen is gone. The black film it makes isn't something you really need to completely scrub off. The carbon actually bonds with the metal. In fact to completely remove it you need to either acid etch it off, or scratch off the surface of the metal. You can't even burn it off without heating the metal almost to the meting point. I just scrub it so it's nice and smooth.

300 C is very close to the melting point of lead. That's a scary temperature to have anywhere in a kitchen! The folks who write recipes need to be especially careful with their units, for the sake of everyone who's trying something new for the first time.

It would be a lot easier to get the temperature just right without burning the mixture, with the use of what I was taught is called a "double-boiler". Basically you aren't heating the candy mixture directly on the stove, you are placing a layer of water between the candy pot and the stovetop. Two pans can be used to duplicate a double boiler in a pinch, and I own a metal device designed to convert two pans into a double boiler as well. You can still burn things in a double boiler, but its a lot harder to do.

Flavors and colors go in RIGHT at the end as you're taking the candy off the heat. Putting them in too early scorches the chemicals in them which is why yours came out so dark

In terms of cleaning the pot, while you're waiting for the mixture to get to temperature I recommend filling a basin (or your sink) with hot soapy water; this way once it's ready you can empty the pan then immediately dunk it in the hot water while any leftover mixture is still liquid. If dunking the pot quickly is too difficult (and you've nobody on hand to do it for you) then remember that if the mixture becomes too solid you can always heat it up again to get it to return to a liquid, just raise the temperature slowly and poke it it, and it's good idea to open a window, as it can burn before it becomes soft again.

This reminds me of melting sugar to glue gingerbread. It’s really hard to work with. As soon as I saw it carmelize my mind went ”oooh noooo”. Pro tip to clean the sugar: fill the pot with water and bring it to a boil. If you let it simmer for a while it should melt the sugar and you can just pour it out. I have only tried this with plain sugar, but it is worth a try. :-) On an unrelated note, the video set-up looks great. :-)

To clean your candy pots, put some water in there and bring it back to a boil - it'll dissolve the sugar again and you should be able to rinse it out easy peasy

You could get an interesting effect by making a separate batch of candy in a bold colour first, letting it cool, then putting a chunk or shard into each mould. Then when you pour in the hot candy in a different colour, you'll end up with dice that have a (hopefully) neat two-tone colour scheme.

You could pour some melted chocolate into the molds and get chocolate dice! You couldn’t get as cool of colors but it might be easier if you wanted to make a large batch for a party or something

Are you still taking idea submissions for future bakes? If so, Everdell is a game with very delicious looking components! The wood looks like tiny flake chocolate bars, the resin looks like baked honey, and berries already look like the tastiest berries there are. Chocolate dice might be a bit easier. KZitemr Rybonator has a video where he tries candy dice, chocolate dice, and gummy dice. Your candy dice turned out better then his though.

There are lots of different kinds of chocolate that stay solid at room temp including cholesterol chips and baking chocolate.

@@DreadWulfie Chocolate chips taste good to me. Plus there is chocolate especially designed for pouring in moulds that stays solid at room tempt. Really most chocolate does. Otherwise chocolate candy bars wouldn't be a thing.

This is pretty cool & they do look good. If you try it again, maybe attempt it with a gummy mixture instead of hard candy? It'll be much easier to work with, you can use agar instead of jelly to make them vegan friendly &, since that's often powdered, add more to toughen them up enough for rolling purposes. They may bounce though..

Literally any time you see temperatures 300°+, it's fahrenheit. Even if they say celsius, check with someone else because that's got to be fahrenheit.

That's always going to be tough working with that much sugar is an art more than science just so you know. Try Just a light color red(maybe) and then you can use a darker color for the numbers. Don't try to jump to far ahead until you nail the recipe In My Humble Opinion and thanks
