I got one from my employer as a retirement gift. It is perfect if you are cooking for two or three people. Pork butts, chicken, beef roasts, and especially ribs. A stand for the ribs will allow you to do two racks at once, A cheap pizza pan with holes drilled in it can be used as a diffuser instead of the water pan. It will allow you to put in more fuel at startup. I have not done a snake method burn in mine but using the minion method you can get a 4 to 5 hour burn at 250 with no problem. Outstanding little unit.

I have to get one of those stand up rib holders for this! And I love the pizza pan diffuser idea! That was a great gift if you were wanting to start smoking some meat!

I bought one of these as a starter to see if I'd want to get further into smoking, but nah I found it's just right for our needs and uses. Some great meals have come off that little thing, ill get years of use out of it. And it's so easy to move and store, it's not a permanent installation somewhere, like a pellet or offset would be.

It is great for a small family, and it being so small and portable is awesome. I loaded it up in the back of my car and drove 4 hours to a friend's and smoked food for the weekend for everyone! And you really can smoke pretty much anything on it. I did 2 racks of Dino Ribs in another video. My next endeavor is going to be a full brisket! Thanks for watching!

very nice! welcome to the wsm family. I like increasing the temp at the 2nd half of the cook as well, I usually drop in half of chimney of lit charcoal to quickly get the temps up(on my 22" wsm). Enjoy the cooker! looking forward to the next cook

Thanks for the tip! I'll definitely do that next time after I wrap to try and heat it up. I drop a little bit of unlit charcoal in but it didn't change my temps much ha.

How was the fire management. How consistent was the fire temp ? And at what time into the cook did you have to add charcoal or wood?

Whether you’ve got the small 14 inch or the largest 22 inch WSM, it’s a great smoker. I used to own the 14 inch and then later, upgraded to the 22 inch. I use it for smoking everything! Very nice review Joe! I subbed to your channel. I also liked and rang the bell. Wishing you the best with that WSM and your channel! This is Dave from Dabomb Smokes. Keep that smoke a rollin!

Nice vid. Did you add charcoal during the cook? how many times? I've had some very good BBQ from WSMs in the past, I know it gets the job done.

I added a little bit of charcoal in after about 5 hours, I loved the end product, the flavor was awesome! I'm gonna fire it up again and try some ribs next I think. Another buddy said he drops a half lit chimney in after he wraps to kick the temp up, so I'll have to try that out as well!

Great video as always Joe. So, how long did it take out of curiosity. I like that little smoker. The 18 inch is almost double the price. Also, how do you like that charcoal? I have questions. Lol.
@GorillaJoesBBQ

So it took... A long time lol, I think over 10 hours. One of my buddies, sj cooks, suggested adding in a half full chimney of lit charcoal after you wrap and you can up the heat and finish stuff faster. That is what I am going to do next time. The charcoal seams pretty good. I only have 1 cook on it but am doing another one this weekend so I can update you after that! You could fit 2 pork butts, one on each rack, maybe 3 racks of ribs, I'll check that this weekend. It definitely gave some great flavor though. I am happy with it!

Great video, man! My parents got me one of these for my birthday and am looking forward to breaking it in! Any meats you’d recommend for a beginner? Also, would you mind letting me know why you chose that specific lower temperature before pulling it to wrap before finishing it off? Also, why did you wrap it? My apologies for my dumb questions 😅 thank ms again for the video!!
@GorillaJoesBBQ
Жыл бұрын
Thanks for watching! You will love the WSM. So you mainly wrap to speed up the cooking process, and you are basically waiting till your bark is set before wrapping. If you wrap before the bark is set then the moisture that gets trapped in from wrapping will ruin your bark. Also once you wrap you can add in a lit chimney of charcoal and kick them temps up to closer to 300 degrees in there and finish the cook off quicker without fear of burning the meat since it's protected by the wrap. As for beginner meats a pork butt is probably one of the easiest you can start with! They are really hard to mess up, as long as you let it get up to around 203-205 internal temp the meat will pull apart super easy. There is no trimming involved, you don't need to inject the meat and the bark isn't super important like a brisket. So it's pretty fail proof!
