bought my first 18in wsm the bullet in 1981 still using it today. i now own 8 wsm 4 22.5 4 18in.. best all round pit. does every thing. new sub here.

"I'm not a competition cook, but I'm sure I could hang with them". That's what I thought.... a little ambitious. I did get 4th place in chicken with a WSM one time. Otherwise, competitions are very taste/doneness specific; don't waste your time. Keep cooking what you want, when you want it. 🤟🤟🍗🐂🤟🤟

WSM is a legit smoker. I also set up my coals like you do. I've swapped the water pan with a Firedial and I got a Lavalock coal basket which has an ash catcher. I've worked on 60-1000 offsets and this can make bbq that's comparable.

WSMs are amazing. Great advice man. The advice about the importance of look and feel over how long something is cooking is something that took me a while to grasp when I first started grilling.

Thanks. Same here. When I got my wsm I felt as if I was alone. None of my friends had it at the time. It was through lots of trial and error and research that I went through to be standing here. Now I’ll cook any damn thing on that. Lol. Hope for the new guys to the wsm they can just walk away with one thing from this video. Have a great weekend brother

Great video. Thanks. I use news paper in my chimney, works really well and it’s free. Spray with a little cooking oil on the paper. I also use an Auber Instruments pit minder, it’s less expensive than the others, about $150 and works great.

Hey Thomas. Thanks for the feedback. Newspaper works great. Haven’t done that in a while. Lately I’ve been using Fire Cups by the Tiger McCool barbecue company. Nice little fire starter and burns real clean. I have to check out the Auber. I’m not familiar with it. Thanks for the heads up. I don’t have many aftermarket parts for the wsm. I keep my charcoal in a covered barrel and keep the bags to start my chimney. Works really well. My son'd were looking to get me a smoker and I have been eying this model. This was a great demo, thanks. Also, ribs look delicious.

Hey Brian. Welcome. Definitely run a water pan. Also fat cap up. Water pan acts as a heat sink. It will hold the temp better.

Great video. I’ve been torn between a WSM and Masterbuilt 800. But here in the uk our climate isn’t great for the Masterbuilt. I think you made my mind up to go for the WSM
