Never mind the nose roll. I was at a party carrying on a conversation and drinking my bourbon and the woman I was talking to asked… “Why do you keep smelling your drink?” It was a 1792 Small Batch and I took the opportunity to let her smell it and ask if she could smell the banana. In hindsight… even weirder to ask a random woman if she can smell my banana.

The whole concept of oxidation and the neck pour actually has its roots in loss of ethanol. The liquid has interacted with oxygen for years, sometimes decades in the barrel. Anything that could have oxidized during that time already has done so. The first time you open the bottle (i.e. the neck pour) the liquid inside has the highest concentration of ethanol it will ever have. Each time the bottle is subsequently opened ethanol is lost. Proof is dropping ever so slightly because the highly evaporative ethanol is escaping and the water isn’t. That why it gets “smoother” over time.
@eafarrar

I was going to mention the same thing. Evaporation is a lot faster and easier in the context of a bottle than any oxidative processes.

In comparison we are wine drinkers as well and have had older bottles of wine that we keep on their side in our wine fridge. An have had trouble getting the cork out in one piece, wether this is a difference or not. But I do agree with you Jason keeping it a little moist can’t hurt. 🥃🤘🏼

Tasting anything quickly becomes pretentious. The pinnacle (to me) is tasting or nosing notes. For years I’ve trolled wine tasting sites by posting the most outrageously over-blown, ridiculous notes and they often get serious agreement or discussion. Sort of like the Key & Peele NFL/college football introduction bit-way over the top and should be humorous but in tasting it gets serious responses. Likewise, literary criticism is a long-standing area for outrageous commentary that’s more about rhetorical floridity (see what I did there!) and showing off than it is analytical. But at the base of it all is a simple fact: the vast majority of people do not have very discriminating taste-they literally cannot distinguish differences at a fine level. (Why there’s so much light beer….) Some actually DO have complex taste capabilities (some are actual professionals) and can distinguish small differences. So there’s that… 😅

I’ve all ways thought the neck pour thing / letting a bottle open was something we stole from the wine enthusiasts folks , but I really have no idea …. I used to open a new bottle and just let it sit for 10 or 15 mins with the cork out , made me feel fancy but does it really do anything, who knows

I always turn the (new) bottle over a few times before I open it, just to evaluate it without the neck-pour factor. But now I realize that’s pointless because the whisky in the bottle hasn’t been exposed to the air yet either way, and that’s the real difference.

I think before whiskey, colloquially speaking (within the vernacular of those around me throughout life), "delicious" is typically used to refer to food/eating only. (e.g. you wouldn't typically say orange juice, coffee, coke, or your vodka redbulls are delicious in the U.S.) Granted the definition applies, but I've noticed how overused the word is in the whiskey world - it's become annoying to me.

I don’t often disagree with Sara, but anecdotally I would say the neck pour IS a thing. BUT, I wonder if it’s a result of not letting the first pour sit long enough before nosing and diving in?!?! I guess I’ll have to experiment!

While I'm not a neck pour denier, I'm pretty convinced it's NOT oxidation. There has been plenty if oxygen around throughout the whiskies life cycle. I think it's loss of some of the more volatile organic compounds. I think peoples subjective opinions support that as "sharper", "harsher", etc. descriptions of the neck pour go along with the lighter more volatile compounds and "rounder", "deeper" & "mellower" correspond to the loss of those compounds. So we should celebrate the neck pour as closer to the distillers' and blenders' vision of the dram. I certainly don't dump it or put it in some gross infinity blend. You can put infinity bottles at the top of my list for silly things whiskey drinkers do.

3:51 If I had my druthers all whisky bottles would have a screw top. They're so much easier to deal with. 4:48 I've had bottles get better after opening, I've had bottles get worse, and I've had bottles stay the same. Laphroaig 10 is different with every glass, and every glass is good. 10:30 Not only is the Glencairn specifically designed for evaluating whiskey, it's in my opinion the prettiest glass anyone's ever made, anywhere, for any reason. 🙂

On the point of nosing.....if you are only smelling with 1 nostril at a time.....there is no point to switch sides...you might be switching sides and actually smelling with the nostril that isn't closest to the glass....IMO just go straight in and let your nose function.....Cheers!

I don’t buy into the neck pour just from a practical standpoint of shipping and handling. As the boxes are moved and the bottles are shelves and then bought and carried home the whiskey blended many times over so unless you have left it on your shelf for a long period of time it should be evenly distributed. Not to mention, depending on the neck profile, the simple act of pouring into the glass remixes the top neck layer into the rest of the bottle.

Neck pours aren't a thing. Now should you let a new pour sit for a bit yes but has nothing to do with a neck pour. I stopped watching a channel because of how one of the guys just chews and makes slurping sounds and is just over animated in his tasting.
@skramzy6628

In my experience, the neck pour is as real as it gets. It's not true for every single whisky, but the vast majority seem to be improved by oxidation. But yeah, I'm talking about letting your bottle open up over weeks or months as you try little pours from time to time. A month or two in, when the bottle is around half-full, seems to be the sweet spot.

IMO, we could all learn from a wine tasting class. Tasting alcohol is tasting alcohol. Many of the arguments can be the same, nose, palate, mouth feel, finish, swirling looking at tge "legs " for viscosity. Finally, neck pour, calling what you want, has nothing to do with the neck, it's the fresh pour. As the bottle empties, the air changes the overall tast. Enjoy all.

I'm a huge believer in the neck pour when it comes to scotch. When I first open a bottle of scotch I pour it like 2 hours before I'm going to drink it, and it usually takes about a month of being open before it really starts to hit its stride or to let very aggressive peatiness calm down. Like Laphroaig's and other Islays, I'll choke down the first 2 pours, then never open the bottle again for a month, then they're great.
