Recipe:
Classic Cheesecake (M. Andersson from several recipes)
Preheat oven to 350F. Rack on middle shelf.
Crust:
1 1/3 cup graham cracker crumbs (about 11-12 crackers)
1/3 cup brown sugar
1/2 tsp cinnamon
1/3 cup melted butter
1. In medium bowl, combine all ingredients in order given, mixing well after each.
2. Press evenly into bottom of 9" springform pan.
Cheesecake:
Have all ingredients at room temperature
2 8-oz blocks cream cheese
2 Tbsp soft butter
1/2 cup sugar
2 tsp vanilla extract
2 eggs
1 1/2 cups sour cream
1. In large mixing bowl, cream butter and cream cheese until light and fluffy and well-incorporated.
2. Add sugar, blending well, then vanilla. Add eggs and beat until thoroughly blended, scraping sides often. Add sour cream, mixing in gently but thoroughly.
3. Pour into crust and bake for about 40 minutes or until light brown at edges. Cake will firm as it cools on a rack.
Topping:
(Preheat oven to 400F)
1 cup thick sour cream
2 Tbsp sugar
1 tsp vanilla extract
1. In medium mixing bowl, combine all ingredients and blend until smooth.
2. Spread carefully over cooled (warm to touch but NOT hot) cheesecake.
3. Bake 5 minutes. Refrigerate after cooling slightly, until thoroughly chilled.
