Welcome to my channel. It is not by chance that you have come across this video, it's about the hard work that has been put into years of cooking, and becoming the person I am today.
I am a retired International Sicilian Chef and 5 times Amazon Author.
Cooking is about nurturing and looking after ourselves and our loved ones.
I come from a large Sicilian family who migrated to Australia just after WW2.
My father Salvatore came with his parents Gioaccino and Carmela and his 4 brothers, Giuseppe, Nunzio, Antonino and Giovanni.
My mother Rosaria came by ship the following year, it took a month to make the passage.
With no one but my father and his family they built a life that they only could dream about.
They worked hard and saved.
They worked in restaurants, built cafes all over the Mornington Peninsula.
I was born in 1960 in Kilmore my parents owned the Blue Bird Cafe, Mumma said that I was born in food.
I have worked in hospitality all of my life.
I've owned restaurants and have been an executive chef.
When my parents both died within 8 months of each other, there was an urgency in my heart.
I wanted to collect all of my memories and create something that I knew they would be proud of.
I decided to write my first book - Carmela's Cucina Povera a journey of self discovery and healing through Sicilian cooking. This book is a tribute to all of my family, it has over 70 recipes of Cucina Povera, it is called poor kitchen but there's nothing poor about it. It is about seasonal produce and utilising the ingredients that are in your kitchen.
My second book - The Heart of the Table unlocking the treasures to family and community through Sicilian Food is about our heart and coming back home to it.
My third book - is Unstoppable Woman of Faith, together with 4 other others we share about our life and our faith in God, it also has a workbook with it to assist you to change your mindset. As I always say, I can't change my circumstances but I most certainly can change my attitude.
My third book - is a tribute to my mother Rosaria, it is 101 ways to transform the way you Cook it is also a Podcast. This was written through Covid when I drove past MacDonalds one afternoon and the line was about 1/2 long. It dawned on me that people don't have the headspace to cook and they can't think about what they want to eat, so they settle for takeaway.
My fifth book - Who am I? Rosy's story a foundling of the Sicilian Wheel. Is a tribute to the Abandoned children in Sicily, during the Bourbon era, the children of the wheel. Its a story of Rosy, she is asking questions about who she is, the question that is on everyone's lips at one time or another Who am I?
