Mom used Welsh Rarebit as a way to get veggies into us: On top of the grilled bread went a thick slice if tomato and 4-5 spears of asparagus, then the cheese sauce (Worcester mixed in).

WE used wine rather than stout for our central USA crowd. It was milder We cut down the W sauce and sometimes, when making in quantity, add milk at the end (fondue it) so it could pour over flat jelly roll type pans of bread and pop it in. This ensemble looks really good...

I always use some cayenne in mine and invariably convert it to buck rarebit, I used to use brown ale over stout until I stopped drinking 25 years ago. Traditionally it was eaten cold, much like Cornish pasties.

Hi. What would you recommend would be a good protein to accompany rarebit? For some reason, I’m thinking some kind of chicken breast (I could be wrong). But cooked in what way that would compliment the flavours in the rarebit. Do you know what they use in Wales for a protein to rarebit? And would you recommend any side dishes with it? Mushy peas perhaps?

that combination looks so nice and extra worth the effort nice meal b/c the mushrooms look so succulant and juicy and tomatoes rich with color goodness. these days my way is the lazy way out of just cheese and hot sauce. I used to like using roast capsicum as well or trying french mustard or Dujon and just spread it on the toast and add mayo to the spread with mustard and it gives the creaminess of the sauce, is a strange sort of way and can add carrot or other grated things for variety sandwiches. even mayo mixed with horseradish sauce would be interesting.

Nice.. But try it using mashed potato as the filler, loosen with heat and milk, add cheese and mustard (English not American) spring onion and bacon is great, drop it on the toast and grill... Awesome

Any place in the U.K. ending ‘shire’ is always pronounced ‘sheer’ or ‘sher’ (depending on where you’re from) and not ‘shire’. Hence ‘York-sher’ or ‘Worcester-sheer’ (which is additionally pronounced ‘Wooster-sher’ just to confuse things).
