Hey everyone. I’m Jeremy and welcome to the channel. Here I focus on whole food plant-based, essentially vegan, comfort food. Generally speaking things that are healthy without feeling like they’re healthy and boring. Pretty much all of the recipes you’ll see here are on my website - I’ll post the links below for you.
And this is what eat is a week as someone who is plant-based vegan - all of these are quick & easy meals that are perfect for Veganuary. So this week I’m going to do something different - I’m not doing to show you EVERY meal I make, but what I’m going to do is show you things you can do to make quick meals. I’ll throw in some of my breakfasts too, but lunches I’ll likely skip most of since I generally just eat leftovers. You can either watch this video straight through or look below in the description to find the chapters for specific recipes.

RECIPES
BAKED APPLE FRITTERS
1 1/3 cup flour (oat or whole wheat)
1/4 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
1/4 tsp sea salt
1 1/4 cup unsweetened plant-milk
2 tbsp unsweetened apple sauce
2 tbsp lemon juice
1/2 tsp vanilla extract
2-3 apples slices into rings and diced
1 tbsp coconut sugar
1 tbsp cinnamon
1 tbsp plant-based butter/margarine or aquafaba
Preheat your oven to 375 F. Prep your donut pan or muffin pans.
Combine your dry ingredients into one bowl, wet ingredients in another, then mix together. Fold in your apples. Transfer to your donut pan or muffin cups.
Bake 20-25 minutes.
Mix together coconut sugar, cinnamon and margarine or aquafaba and sprinkle onto donut.
THAI PEANUT STIR-FRY SAUCE
2 tbsp rice wine vinegar
2 tbsp tamari
2 tbsp natural peanut butter
1 tbsp maple syrup
1 tsp garlic powder
1/4 tsp ground ginger
1/4 tsp chili powder or flakes
Combine all ingredients together.
