I've done roofing repairs on everything from single family homes up to multi-million dollar churches, they all use OSB for the roof sheathing. The only place I've ever seen plywood is on the edges with an exposed eave, where humidity will cause the strands to flake off of OSB. The only time the sheathing ever gets damaged is when the underlayment either gets damaged or doesn't get sealed properly at penetrations and valleys and such.

The roofers that just replaced my corrugated tin roof (yes I'm an Aussie) had to work quickly before the weather changed. The last day they were working as the snow was falling and the mean freezing wind from the snowfields was hitting. I think the snowfields got more than a foot of snow that day so wind chill was really bad. Sidenote: Four days after we had a massive hail storm with more than 6 inches falling in 10 minutes. It was bloody cold. To finish the roof and put my wood fire chimney back on the roof the guy had to wrap his hands up in a spare jumper and gloves. His hands went purple and numb from the cold. The worst part was putting on the silicone/ liquid stuff to seal it completely. He had to use his fingertips to push the sticky gel around and under parts of it. Blessings, Dot

Getting paid by production however is a different story. There’s so much drive to do more because you get more pay out of it. Americans should absolutely love and adore Hispanic peoples. I quit hiring anybody that speaks English, and I learned Spanish. I fell in love with my men. They absolutely kill them selves for me, and I pay them more than I would pay anyone else. Americans don’t know how good they have it because Hispanic peoples still remember how to work hard, and we have totally forgotten it. Shame on us and praise be on Hispanic workers.
