Welcome to what I eat in a week to stay fit in college, where I show you lots of easy, healthy and REALISTIC meal ideas that I eat as a college student, as well as my top tips for how to start your health journey and live a healthy lifestyle. I also tell you how you can get lean and strong in a realistic and nonrestrictive way (and feel amazing which is the most important thing!)
This healthy week of eating shows some of my FAVE recipes like vegan mac and cheese, healthy pumpkin brownies, brownie granola, a Pink Cloud smoothie bowl, coconut shrimp, vegan curry, nourish bowls, chickpea chocolate chip cookies, healthy carrot cake muffins and so much more!!! Vegan curry recipe (inspired by Linda Sun what I eat in a week)
-4 large carrots or 2 cups mushrooms
-4 large potatoes
-spices: 1 tbsp garam masala, 1 tsp turmeric, 1 tbsp garlic powder, salt and pepper to taste
-3 cups water
-1 can coconut milk
-1/4 cup tomato paste
-4 cups of cooked chickpeas or lentils
Boil your potatoes and veggies until soft with the spices, coconut milk and tomato paste for 1 hour, then add in the cooked beans and cook for an additional hour. Serve with extra veggies and rice!
