Hey friends!🌞 Welcome to another "what I really eat in a week" video! This one is full of easy, vegan, nourishing but delicious food because that’s what its all about for me!! I love to fuel my body predominantly with whole foods, but I like to keep it simple! I don’t always have time to make a crazy complicated meal and I’m sure you’re in the same boat!
Also I practice intuitive eating and don’t live with any restrictions ( other then the ones I make for ethical reasons ). I like having a balance of all things in my life because food is about pleasure and nourishment!!

Homemade Balsamic Vinaigrette:
1/2 cup balsamic
1/4 tsp salt ( or to taste )
1/4 tsp pepper ( or to taste )
1 tsp garlic powder
1 tsp onion powder
1/2 tbsp maple syrup
2-3 tbsp olive oil
StirFry :
1 block extra firm tofu
1 head broccoli
1 1/2 tsp corn starch
1/2 tbsp sesame oil
Sauce:
1/2 cup soya sauce ( sub - tamari )
1/2 lime ( sub - 2 tbsp rice vinegar )
2 tsp sriracha ( or to taste )
1 1/2 tbsp maple syrup
1 large clove garlic ( minced )
1” fresh ginger ( grated )
3 tbsp PB
Heat a large pan on medium - high heat
Wrap tofu into a t-towel and apply some light pressure to squeeze of some liquid ( or press your tofu for 1-4 hours ). Cut tofu into small cubes and place into a bowl. Add corn starch and toss.
Once the pan is hot add oil and tofu
Wash and cut broccoli into desired sizes. Add to the pan along with the tofu once the tofu has started to brown ( turn down the heat if needed )
Add all the ingredients for the sauce in a bowl and mix together well. Once the broccoli is almost cooked and the tofu is browned add the sauce and stir. Reduce the heat and cook for a couple more minutes
Enjoy on rice, quinoa or with rice noodles!

Tofu Marinate: ( for 1/2 a block of tofu )
3 tbsp soya sauce
1 tbsp rice vinegar
1 tbsp maple strup
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
Let tofu sit in the marinate for at least 20 minutes
