The following is the summary of the step by step guide
1. Blanch the bones or meat, with ginger and Chinese cooking wine (optional) to get rid of the blood, impurities and the gamey flavour of the meat
2. Boil the water, then add the bones or meat and all other ingredients, including the Chinese herbs and a couple of slices of ginger
3. Continue the cooking with high heat for about 15- 20 minutes
4. Then bring the heat down to medium or low. But not too low. It is important to see a small bubbling on the surface.
5. Set a timer for 30-45 minutes.
6. DON'T add any seasoning during the above process
7. Once the time is up, then you can taste the soup to see if you want to cook it longer.
8.At the end of the cooking, you can add a small amount of salt and/pepper to your own liking.
