Spelt is one of the oldest cultivated crops in human history and is believed to have first been used approximately 8,000 years ago. Winter time I tend to eat more porridge than any other time of year as it's a form of central heating. As a cyclist it's slow energy releasing food that's perfect for long rides and great source of good clean energy. Additionally, spelt contains small amounts of calcium, selenium and vitamins B1, B6 and E. Like most grains it is also high in carbs and an excellent source of dietary fibre. Nutritionally, it has high content of zinc and protein than wheat. Spelt helps the body to regulate metabolism, aid in creation of sex hormones, increase circulation, build strong bones, improve the immune system, boost the digestive function, and lower blood sugar and `LDL cholesterol levels.

Method 1 1/2 cups spelt flakes | add to pan with 300mm water and bring to boil reduce heat and simmer | add 1/2 cup hemp seeds to nutribullet jug with dates, sea moss and water | blend for 30/40 seconds | add milk to spelt flakes and mix well | simmer for 15/20 minutes | serves hot and garnish to your liking and enjoy,
