Totally agree with Marion, have a few different types of soy sauces in the kitchen for different crusine for the most authentic taste. But for Chinese light soy sauce the first extract soy fermentation always taste the best. First extract tend to be thicker and darker. The subsequent extract of the soy ferment produce more budget friendly ones. Colour looks lighter and texture more watery.

I love these videos, Ives used all them but never tried the Thai soy sauce…. I will definitely try cooking with it especially for my Thai cooking. I would love more information videos on other sauces and flavours of Asia. My favourite one is the premium pearl brand too. When I’m desperate I will use lee Kum kee premium.

Thanks for the video. Your taste test of the soy sauce probably gave you more sodium then the "Daily Value" allowed. I am 74 years old, and I like cooking and eating food a lot. I liked the food in high school, then college, then went into the USAF and liked the food there too. I got married in 1975 to a woman that did not really know how to cook. Those days were still great! The food ok. There was a time when my wife made me a German Chocolate Cake with Betty's help. My mother also made me a German Chocolate Cake but from scratch. My wife didn't like it that my mother also made me a cake and asked me which one I liked the best. I told her that hers was the best. I still have her and we just had our 48th wedding anniversary and are still in love. Enjoy the food you eat and who you eat it with! I have always been the one to grill outside and make breakfast on the weekends. I recently bought a wok and have been making stir-fried rice with meat, eggs and vegetables. Have tried pork loin, shrimp, Italian sausage and chicken. Want to make some other stir-frys and have been watching KZitem videos. For flavor I really like many of the Chinese/Asian sauces but many have a lot of sodium. I take blood pressure medication and try to keep my sodium intake at a reasonable number. Also using just a little sauce is not the norm, who uses just 1 Tbsp. I have several sauces to flavor my stir-fries: ---------------------------------------------- Great Value Less Sodium Soy Sauce (Sodium in 1 Tbsp=25% DV), Thai Maekrua Oyster Sauce (Sodium in 1 Tbsp=20% DV), Lee Kum Kee Hoisin Sauce (Sodium in 1 Tbsp=25% DV), Kikkoman Stir-Fry Sauce (Sodium in 1 Tbsp=8% DV), Kikkoman Soy Sauce (Sodium in 1 Tbsp=42% DV), So a packet of Soy Sauce (Sodium in 1 Tbsp=42% DV), Compared to old favorite sauces: -------------------------------- Ketchup (Sodium in 1 Tbsp=7% DV), Yellow Mustard (Sodium in 1 Tbsp=3% DV), Mayonnaise (Sodium in 1 Tbsp=3% DV), ===========================================================

Thanks for sharing! Just bought and peeled the seal off the kikkoman marudaizu soy sauce - oh gosh, it smells amazing! Quick question: Do you refrigerate your soy sauce? will it really lose the punch of umami, fragrance otherwise when left somewhere on the shelves, not exposed to heat & light?

The best Soy Sauce is 'Sungold Thick Soy Sauce'. There is absolutely nothing better than it. It is the Kewpie Mayo of Soy Sauce. The bottle has a red label if you look for it.

I love this channel and use so many of the recipes. Initially when I saw Marion about to test the soy sauce, all I could fixate on was the white blouse😆😂🤣 I always get it on my clothes! I grew up eating Kikkoman, and I can totally relate to the taste buds getting used to it. I can taste a difference in dishes and actually don’t like the other flavors.

To me it doesn't matter which soy sauce you use in your cooking, I'm using PREMIUM GOLDEN LIGHT SOY SAUCE AND PREMIUM DARK SOY SAUCE is good as any other soy sauce.

Thanks Marion, Pearl Bridge is amazing for fried rice or noodles. The Gold Label Superior Light is amazing but super hard to find here. I often use the silver one because its more readily available here. Have you heard of China Lily Soy Sauce? Its what we use here in Canada to flavor white rice.

Do not use China Lily. You can see from the ingredients that it is "faux" soy sauce. If you want a supermarket brand, try Kikkoman. Why not try Yamasa? I think it is much better than Kikkoman. I prefer to use the Yamasa bewed in Japan and not elsewhere. Kikkoman is being brewed all over the world now. Yamasa is also being brewed internationally but is "cleaner" tasting than Kikkoman. It is definitely better with sashimi. I cook Japanese and Chinese food and at a minimum have Yamasa and dark and light Chinese soy sauce.

@@shirleykaye9693 We only add it to rice and eat. Most people that I know off dont cook with it. Its too salty otherwise. I havent seen yamasa brand at least where I live but I will be on the lookout for it. I find kikkoman has a different taste so I go for the pearl river bridge for cooking. The gold label one is the best but my asian store is a hit and miss. It will only show up once in a while.

You seem to only know Japanese and Chinese food. Korea also has a traditional "Chosun Soy Sauce". You may not be familiar with Asian culture, but please keep your eyes wide open and study.

I use Lee Kum Kee… also various versions of light - standard, premium and superior, Japanese for cooking and for sashimi/sushi, and dark soy sauce - mushroom and sweet dark. I totally get you on having different types. Same applies to chilli condiments!

Amazing! This was so helpful. I have the healthy boy brand, pearl River and Kikkoman in my cabinets!! And also the pearl River dark soy sauce. And also 2 different brands sweet indonesian Kecap (Manis and medja) . And a very premium artisan Japanese soy sauce and Kecap that I only use for dipping of finishing touches. Mmmmmm love me some soyyysauce!!!

I'm half Japanese growing up here in the US we only had two choices kikkoman and La Choy. Now you can go into any supermarket and have a much larger selection. Since I grew up eating Japanese we always used kikkoman. But, I actually prefer Chinese or Korean. When I started cooking Chinese dishes I still had to use kikkoman since I couldn't find Chinese style soy sauce. Finally found an market that carried a large variety of ingredients. Yay.being military. My favorite soy sauce for Chinese and Korean is Kimlan dark. Korean neighbors used that brand. I might have to look for Pearl River premium. We have almost a dozen asian markets in this area now. Growing up we only had one. My mom use to go there to get instant ramen. They only carried ichiban original. That was before top ramen and its dozen flavors. To this day I can't stand to eat ichiban original. I'll eat any flavor but that one. Please to all that is holy do not, I repeat do not use La Choy soy sauce. That is not soy sauce. That's basically a chemical experiment.

I am obsessed with Kikkoman! But this has made me want to try the Thai soy sauce, at least for fried rice (Kikkoman is nice as a spoonful in some white rice for Japanese dishes etc, but I find it too dark and strong for fried rice). This is now on my list, thanks for this fun and lightly informative vid Marion 😊

My favourite go to for Fish sauce used to be Thai brands but now “Red Boat” 40°N made in Vietnam. It’s quite expensive but imo the best. Has a high protein level too.

What an intriguing and interesting test! I'll probably end up getting two different soy sauces to compare. But I know that when I'm cooking, I'll simply get confused if I even have to choose between two varieties. How you can make decisions based on your particular cuisine is way beyond my abilities. I used to use common well-known brands like Kikkoman, but the game changer for me was switching over to Wan Ja Shan premium soy sauce. The quality and taste is unmatched. I even bought a far more expensive high quality Japanese soy sauce but it still didn't compare. That being said, certain types of soy sauce are best suited to certain food types. However, if you want just one brand and you want the best, I couldn't recommend Wan Ja Shan more.

love the dark brown full of beneficial nutrition excellent for making thick sauces and the flavor is awesome love the salty taste which has beneficial Iodine for your thyroid health. I also add it to my orange juice to make a good collagen and elastin drink love ya Marion you make excellent asian dishes now I know how to prepare keep up the good work of teaching my favorite teaching is 3 recipe noodles ive watch and learn how to make noodles and mastered it down

For thaï cooking I traditionally use Pukaow Tong ( sorry for english spelling 555) with green cap light soya seasoning sauce. But for padt krapaow I add also thick dark soya sauce like Dek Somboon ( again sorry for english spelling ) and now they often use the Dek Somboon thick sweet dark soya sauce ( with this one you not necessary need to add oyster sauce ….. )

Thank you for sharing this experiment. As someone who grew up eating Asian Cuisines, this video gives a clarity to those who didn't grew up eating authentic Asian foods. I grew up eating Lo Mein out of cans. My fellow American commenters know what I am talking about. For those who don't know, don't worry you're not missing anything. Trust me! As I've gotten older I have tried different authentic Asian foods. My family moved to Florida in 1994. Colonial Drive is blocks of Asian Restaurants. I'll never forget this no matter old I get. My mom and I got cocky and tried Vietnamese restaurant. Here is two white women who had NEVER had tried any other Asian food besides Chinese. The Vietnamese restaurant was beautiful. You really felt like you walked into Vietnam. OMG! We weren't ready for how damn spicy this cuisine was. Needless to say we had our soup paid and got to hell out with our remaining taste buds that didn't feel like they were on fire.

Surprised to see you did not include a couple of soy sauce products, Soy Paste (Kimlan), Momofuku both soy and Tamara soy sauce; and. even more importantly Yamaroku Shoyu Pure Artisan Dark Sweet Japanese Premium Gourmet Barrel Aged 4 Year Soy Sauce "Tsuru Bisiho", which I would consider one of the best and expensive sauces.

Sorry, but this western cook does nor understand the differences in soy sauce types and their uses. Soy sauce is not intended to be tasted like wine and generally Western people tend to overuse it as a condiment. Also, classifying soy sauce by country of origin, when in the case of China and Japan there are literally scores of types, is, I'm afraid, a display of ignorance. To be fair, we could title this video "A Western guide for the misunderstanding and misused of soy sauce for Western audiences". sorry, but to an Asian person this was had ro watch.

Nice video and important for me as a Dutch Indonesian guy. I always buy the Pearl River Light and Dark brand. I will replace the Dark version with the Premium one next time I shop. Due to the limited cupboard space I have to limit it to these two soy sauce flavours. Next video test the vinegars😀 as I use it often for mixing with some soy sauce to make a dip sauce for my loempia. Can you react to the last Taste Atlas ranking😀 where Asian cuisine ranks low compared to European cuisine. There is some food for thought😀 needed.

The problem I have is that all the soy sauces you are testing are quality products. What I want to see, not for myself as I am well versed in the various soy sauces and which should be used in what style of food, is a comparison of good soy sauces such as these with the grocery store quality sauces such as VH and others that are basically chemical soup. That would be a comparison worth posting to show people that you do need a decent soy sauce if you want to have a decent meal. As far as price goes, I buy the regular Pearl River Bridge for around $2.77/bottle and maybe another 75 cents extra for the gold label. Soy sauces will not make or break anyone's budget and they should always purchase the best quality available.

I use two soy sauces at home, one for cooking, one for salads and dips. But I will try the golden label. Thank you!

Personally I think I currently have about 5-6 types of soy sauce in my cupboard right now!?🤷♀️👍🏻

Like the others, Pearl river is one of my favorites. Hard to find the premium one where I moved... Thai one, Nice, but have to add some dark soy sauce to give color. I would have added in your test some real premium japanese soy sauce with long fermentation... I hate the kikkoman one, as I find it acidic and too salty. I never liked it, but once you try a traditional japanese one, long fermentation up to ten years... OMG It's really expensive, but simply on fresh cooked rice, nothing else... A pure Wonder. You don't use much, you just enjoy the rich, complex flavours, nuttiness, slightly sweet, Nice salty kick. For everyday cooking : I follow you, Pearl river or Thai. For pleasure and to complement a real nice dish, no cooking, the traditional japanese sauces, like good wines, are a must. As I'm not rich, I only take small bottles ;-) and use something like 5 or 6 different one too.

I imagine it wouldn’t be too much different than having vegemite straight up. For me, an American, that would probably be torture

I basically only know the Healthy Boy Brand. I am slighty annoyed by the additional ingridients, but dont know if it's even worht worrying about.
