We're going to find ways to use every bit of a case of organic lemons and have nothing to throw away. Today JUICE is on the loose. We’re going to WATER BATH CAN LEMON JUICE and make LEMON CURD!!

LEMON CURD INGREDIENTS
2½ cups fine sugar
½ cup lemon zest (freshly zested), optional
1 cup lemon juice
1/2 cup unsalted butter, cut into chunks
7 large egg yolks
4 large whole eggs
For the RASPBERRY LEMON CURD, I just added 1 cup raspberries, 1 more whole egg, and reduced zest to ¼ cup
