R E C I P E S
BREAKFAST
Avocado Toast:
2 slices Sola Keto bread toasted, spread 1/2 of 1 single cup of mild guacamole on each slice, sprinkle everything but the bagel seasoning on top, drizzle honey on top of that. Add 1 over med/hard egg on top and enjoy!
Luxi's breakfast
1 fried egg with yolk broken with shredded cheese of choice on top, 1 slice on toasted white bread with cream cheese, blueberries on the side. (cut blueberries according to your child's age.
LUNCH
bacon + cheese pinwheels
ingredients:
2 tortillas ( I used almond flour tortillas)
2 tbsp cream cheese softened, or cream cheese spread
1 cup sharp cheddar shredded cheese
4 pieces of bacon cooked and chopped into bits.
about 1 tbsp ranch seasoning
directions:
If using almond flour tortillas you may need to heat up first, if not don't worry about heating them up.
Mix ranch seasoning and cream cheese together and spread onto tortilla.
Add shredded cheese and bacon bits on top.
Roll up tortilla and place in the refrigerator or freezer for 5 to 10 minutes to let it set (it makes it easier to cut this way.)
Cut tortilla into 1/2 inch thick circles and serve with fruit or veggies.
This is a great appetizer as well.
SNACK
Apple Donuts:
peel and core apple then slice apple horizontally.
Add almond butter or peanut butter on top and add mini chocolate chips!
(if you are making ahead make sure to soak apple slices in lemon water for a few minutes so they wont turn brown!)
DINNER
Taco Spaghetti
ingredients:
12oz uncooked spaghetti (I used 1/2 regular pasta, 1/2 banza pasta)
1lb ground beef
1 package of taco seasoning
1 can of black beans (drained and rinsed)
1 can rotel
2 cups shredded cheese
2/3 cup salsa
2/3 cup water
directions:
Preheat oven to 350F break spaghetti noodles into thirds: cook spaghetti according to package directions for al dente. (It took mine 10 minutes, it's usually 2 minutes less than the directions say if it doesn't have an option for al dente)
meanwhile, in a dutch oven cook beef over med heat until no longer pink, breaking into crumbles.
Stir in taco seasoning mixed with water. Bring to a boil and reduce heat, simmer for 5 minutes stirring occasionally.
Stir in beans, rotel, 1 cup of the cheese, and salsa, mix well.
add in drained pasta and toss to combine.
transfer mixture into greased 9x13 baking dish. Bake (covered) for 20 minutes.
Sprinkle remaining cheese on top.
Bake uncovered for 5 minutes or until cheese is melted.
Let stand 5 minutes before serving.
