Ingredients:
Chicken thighs without bone - 3.3 lbs (1.5 kg)
Pineapple juice - 1 cup (250 ml)
Ketchup - 3.5 fl oz (100 ml)
Soy sauce - 1/3 cup (80 ml)
Oyster sauce - 2.5 tbsp (40 ml)
Apple cider vinegar - 2 tbsp (30 ml)
Mustard - 1.5 tbsp (25 g)
Sriracha - 1.5 tbsp (20 g)
Garlic - 4 cloves
Dried ginger - 2 tsp
Dried onion - 2 tsp
Paprika - 2 tsp
Cumin - 1 tsp
Cane sugar - 1/4 cup (50 g)
Pineapples for garnish.
Preparation:
Grind the cumin to bring out the flavor.
For the marinade and glaze, combine the cumin, garlic, paprika, onion, ginger, soy sauce, mustard, sriracha, oyster sauce, ketchup, pineapple juice, and vinegar.
Stir everything together well.
Add half of it to the chicken, stir to combine.
Let marinate for about 30 minutes, you can leave it for more.
If you use freshly squeezed pineapple juice, do not leave it for more than 20 minutes, otherwise the meat will become too soft because of the acid.
Combine the other half of the marinade with the sugar, bring to a boil and simmer on low heat for about 20 minutes until thickened.
Put the chicken on the grill and turn it occasionally until cooked through on the coals.
Meanwhile, fry pineapples for garnish. You can take both canned and fresh.
Smear the chicken meat with glaze on both sides.
Fry for another 3 minutes on each side.
Serve with pineapple! Chicken and pineapples are a great combination!
