"Why do I even make a menu" this is something I actually shouted back when I was working a Friday bomb. I was supposed to have the day off so I should have the day with my son. So I was already on edge. I told all the servers no mods, and sure enough. 8 modifications on a 10 top. Lost my shit. Damn near shut down the restaurant. Then I saw how bad the table was treating my server and I got to reject the table any service. Best 80 dollar tab I picked up in my life.

Yep, most of the time you can change small things or clean something before you cook anything for allergies, and if it’s a “hold this” or a “add that” it’s really easy, but if someone came in and asked for tacos (which we don’t serve) then its a no and you’ll get laughed at😂

Yessir. Only time they'll modify stuff for you is if you used to work there or are related to a coworker and on friendly terms with the kitchen (who is usually ignored lol). Then we'll do sumn stupid that you want like chicken marsala but with alfredo sauce instead of marsala sauce, IF it's a slow day (i.e. a wednesday at 6 or a tuesday at 3) but aint no way we're gonna do crap like that on a friday night when it's busy as butt cheeks and we're barely hangin onto our bowel movements bc we cant leave to go use the bathroom without the whole kitchen falling apart

@@virtueofabsolution7641 sometimes when it’s not busy we can accommodate, but when there are customers waiting during a rush hour we’re not going to make a specialized order (and it’s our choice whether or not to) I see what you mean but we simply don’t have the time or resources to keep track of what we should or shouldn’t do for customers if it’s not a common request

Yeah... I used to be a line cook in a busy af restaurant so i should know right. One time we went for early drinks on a monday to the cocktail bar we frequented across the street and asked what the most laborious drink is (was called like force of nature or somesuch) and the bartender happily made us 3 drinks with elaborate cucumberpeel garnishes carved to look like eagles. When a bit drunk a few weeks later our chef ordered 6 of em after ee had told him how badass it was, on a friday and in unison me and 2 others yelled "without garnish" before our chef got strangled.

Same i can feel the pain. There is customer want ramen with chicken meat but change to unagi and i say cant change the chicken meat to unagi but you can add unagi as alacarte. But the customer want ramen with unagi but the price of ramen and not with unagi. I was furious i was one person as server, cashier, taking order for take away, and send a food. One person to handle around 15 customer at different table.

As a previous restaurant manager i had to work the day my father died and was not doing well. A guest had some very rude words about me 'not greeting people with a smile'(her exact words) and i blew up then spent 20min violently sobbing in the fridge. No one asked to see a manger the rest of my shift and i later found out a server would appear as the 'manager' to give me time to myself. After i left i recommended him for the promotion that would take over my job.

Yesterday, a coworker said I was one of the hardest working people there, and that everyone else was lazy (the pay is quite bad, I don’t think my coworkers should work too hard, and they work hard at other things). I work a lot and have high standards. I’ve been told to take less time cleaning by cutting out steps by managers, and likewise told to cut steps while preparing sweets. I ask no more from others than I do from myself. My style isn’t for everyone, but I can stand behind my work knowing I put plenty of effort into it, and that I get good results even if mismanagement means that the end result is a bit muddled

I remember those days/times. Some days you have time, can do anything, others you're over your head with orders, can't waste any time, and you hope everything goes correctly. Prep early in the day was the only thing preventing us from failing. I liked those strange custom orders i occasionally received, it broke up the everyday same routine, plus you just never knew what you would get. Some orders were beyond anything i could think up.

Same. It’s part of understanding how to eat out, when to order something complex vs something simple. It’s the same reason to never order something finicky like shellfish a few minutes before closing (unless they close early) (rate of food poisoning increases). A complex order has a higher rate of failure, pushed much higher by busyness and understaffing

As a line cook this is very accurate. No problem with doing mods on weekdays when we're relatively steady but God forbid it's a Friday or Saturday and we're in a dinner rush with all the pressure on us. We ain't got time for that shit 😂

This is the primary reason why human chefs will NEVER go out of business. We'll have automated diners, sure, that serve the exact same meals at every hour of every day, no questions asked, but then we'll also have the bored human chef who wants to go wild in the culinary/alchemical arts every once in awhile, but who also does the regular menu items to maintain practice. The mark of a solid business is this exact video: doing the work when the work gets busy, but finding time for art when the work gets lazy. As an aside, my dad and I went into an INSANELY busy restaurant at ~6:00pm, where we got to talking with the host while getting seated and getting a prix fixe spontaneously made for us (my dad is worldly and has a very picky palate; I guess he impressed the host with his stories of other famous restaurants/chefs/vineyards). One of the best first impressions of a restaurant we've ever had on O'ahu; we'll see if they can maintain their art. XD

But some people ask for modifications because of allergies or intolerances. I have a gluten sensitivity so I have to ask questions and/or get things modified or I’ll get sick

@samg6940 literally just tell your server you have a food allergy before you decide what to order. If it looks busy, avoid ordering dishes that contain those allergens

As a Cook, I understand and sympathize with ...The Chef. One of the restaurants I worked in, we had a full menu, steaks, sauteed food, fried food, smoked food, Friggin gourmet burgers, Assorted salads, etc... And the owners decided it would be a great idea to add hand tossed pizzas to the menu. Did I mention we were busy, and on my nights I was the only one cooking? So one night, I`m super busy and thinking everything is going great, and a giant TO GO order comes in. After I cook probably a twenty top Go order, I move on too the next ticket I have, which is a single burger, cook it, put it in the window, it goes away, I move on to the next five or so tickets... Then one of the owners comes into the kitchen yelling at me because of all the missing food. This was of course news to me. Turns out that FIVE tables worth of food was missing, even though I cooked it and put it in the window, FOUR of the damn Pizzas were missing, again after going in the window, and that last burger I cooked after the GO order was supposed to be part of the go order, even though it was on a separate ticket with no indications it was to go... And it was missing. All told it was about an hours (cooking time) worth of food that, as near as I can tell went to the wrong tables. Yes I had to recook everything. No I was not happy. So, for the waitstaff out there, How on earth did these idiots, who took the dang orders in the first place, lose MULTIPLE tables worth of food? I mean, wouldn't someone say "I didn't order that!"? I still cant figure that one out. I did have a nice chat with the waitstaff about how I could fit four of them in the smoker, and how we would be serving pulled pork sandwiches for the next week. The other owner did tell me I was no longer allowed to send the waitstaff home crying anymore, but I don't even remotely feel bad. What would your Cooks do in that case?

I don’t mind modifications, but I am just a server. I use a digital POS which has that functionality built in, and anyone ordering with lots of mods should know to wait. Modifications that aren’t able to be typed in are super annoying though. Anything extreme I let them know that they need to be willing to accept that it may not happen. If someone asks for modifications after paying, they aren’t getting it (it’s not able to be changed with the structure of the system)

Well put; they're each so distinctive! And i love all 20 + of them. Hmm, except Poppy. And River. And the quintessential karen, and the (unnamed) guy that takes all the mints, altho that guy well, it's a minor compulsion I'd guess. Ugh, and the grifter guy Bridget met in Vegas, forgot gis name. I nearly rendezvoused with a deceptive and crafty person in Vegas once, a professor, and now I'm SO glad i didn't and Bridget's experience put a cap on it.

No frrr, i covered a substitution charge for a lady because she wasn’t ordering much and it didn’t cost me any, maybe a couple bucks, and she came back and got PISSED I wouldn’t do it again. “Ma’am, I did that one time and told you I’d only cover it this one time, you tipped me 50 cents last time I have no motivation to lose money on your table”

That would be a valid thing to do as well, but I usually do work like that out of sight and people wind up assuming the worst. I remember a customer ordered a coffee with a shot of espresso and asked if we actually add it (it’s a weird order since it’s basically adding a bit of medium quality coffee to a cup of cheap coffee). Obviously I prepared it normally, but some people just can’t understand the work that occurs outside their line of sight

Exactly. I’ve never worked a restaurant job but I’ve worked enough minimum wage hard labor jobs to know that things happen behind the scenes that I may not be aware about. In this scenario, after asking why and Nicole gives me that answer, I would’ve been like “cool, ok”. But then again, I’d be aware that it’s busy and I probably can’t order a special dish so I wouldn’t have asked anyway.

i understand this 100%, like i worked at a burger joint, and the lil modifactions weren't a big issue, but the bigger modifactions... oh boy when there where alot of orders with big modifactions the grill person was pissed. all of us who where in grill when those came in. if it's lil modifactions it's cool. but if it's basically a entirely new item or multiple orders like that then it gets aggrivating. i've actually heard some of the chillest people i worked with get so pissed. and they got even angrier if you canceled the order or just drove off.
