Raspberry is delicious. I got some local Washington raspberry blossom, for my first mead, it is aging. It is so good. I am facinated with making traditional with different kinds of honey. Currently have a blackberry honey traditional brewing.

Great comparison! I remember seeing a comment not long ago somewhere from a beginning mead maker who was told that a beekeeper told him/her ‘honey is just honey’ and that it wouldn’t matter which one was used because ‘all honeys are the same’. Hogwash and this video proves it. Thank you!

I once thought that “honey was honey” as well. Until I dove more into mead making. This was a lot of fun to do and super exciting to see how the different honeys reacted so differently throughout fermenting! Who would have thought! Can’t wait to try these once they have aged as well! *Beau

@@ErickandDerrick - As a failsafe against accidentally drinking all of your favourite: slap a label on one bottle of each kind with a warning: “Do not drink until…(insert date)”. Works for me. Accidentally finished all of a few meads I wanted to age for more than a year. Sigh…

Raspberry is my fav so far. Limited honeys in Canada. Try Quebec they have a very large selection on honey!

I totally agree with you on the raspberry! The blackberry, even though I’m not a huge fan of black liquorice, was a very close second! (I really thought the blueberry would be better) but again. That’s just my opinion! 😂 Quebec hey? I’ll definitely have to look into that! Do you have any suggestions for new/different honeys to try? *Beau

@@ErickandDerrick I do enjoy Blueberry and Blackberry. I just tried Apple Blossom and it was amazing too. Not sure on the ethicality of it (Wrong Bee for Pollination). I am ordering Sumac Honey and I am about the pull the trigger on Fir honey. Although I think it might be more like a clover with Fir sap added. Seems a bit devious to me. I get the Raspberry from Intermeil, pretty good quality and price is good too.

Interesting! Can't wait to see the evolution of these. I was looking into local monoflora honeys, here in Sardinia, for my first experiments. We've got some interesting stuff like a dark heather honey, which I never tasted yet but is said to remind of caramel taste; myrtacea honey which apparently is balsamic, never tasted yet also; wild thistle honey, artichoke like bitter (while being sweet of course), I love it; eucalyptus honey, very good during winters, of course very balsamic and somewhat bitter; one we call corbezzolo honey which I found translated into Strawberry tree or Arbutus, I had some in the past, more than once but not often, it's dark and bitter/delicious, strongly aromatic but very expensive though, it can only be harvested during winter so they can make very little of it, so I thougth of using it mixed of course. Then also acacia and orange blossom, and some more usual stuff.

I’m excited to see how these round out as well! Oh man, all those honeys sound amazing! I’d love to get my hands on a variety like that to do another side by side experiment like this on. It was really neat seeing how each one reacted throughout the process! *Beau if you try any of these you’ll have to let me know how they turn out!

@@ErickandDerrick It surprised me as well how they acted so different! Go figure what was going on, it's so interesting! I'm biting my fingers how exited I get about this stuff! I forgot about another honey, wild Cistus honey, have yet to taste it but apparently, wait for it, it's so mineral it's a bit salty! How cool is that? And the more known chestnut honey, we do that to. Have you ever tried chestnut honey for a mead? I love the taste of chestnut honey, it's deep, bitter, nicely acidic and it's full of tannins! Sounds promising for a mead! But it's said to be very proteic, could that mean you're gonna get haze in your mead? Hmmmmm! B%D of CS mead Tried chestnut wood for aging mead and it turned out cloudy as actual cloud. Hmmmmmm! My poor brain is heating up in here! I'm gonna try all of them, oh I will, bwahahaha! I'mma be the Sardinian mead maker everybody knows about and nobody wants around for how annoying my constant mead talking will be. I'm already annoying now!

Wow interesting! I definitely need to look into all these txt sounding honeys! Lol. You aren’t annoying at all! Your excitement is Ecole rating and is wanting me to go do more and more! Lol. I’m from Canada and I feel the same way about myself. It must drive my family bonkers when I discuss all my mead stuff. 😂 I have yet to find some other Canadian mead makers… at least around where I am… I should maybe look a little harder! (Get some help drinking all these meads!) lol

@@ErickandDerrick Ha ha! I had a Canadian buddy, for a summer, when I was 14 or so in '93 or so. He was on vacation with his family. He tought me my first real English, like the differences between "F*k!" and "F*k you!" and "F*k off!" and things like that. There was this Sardinian girl and he fancied her, I helped him with her, in fact it didn't work out at all, not in the slightest, don't even start thinking about it. She hooked up with another 14yo kid from Rome (on vacation as well). There was this British girl too, and another summer buddy of mine from Naples who liked her. The Canadian kid helped the Neapolitan one with the British girl, mostly for the language, didn't work out either. None of my buddies got girlfriends that summer, neither did I. It was fun though! I learned both some English and some Neapolitan that summer.

I've heard that buckwheat honey is a strong and makes an odd mead. I'll have to find 3lbs, and break my (no small) batch size rule and make a 1 gallon batch.

I got a 2 ounce sample from the place I get my pre-bocheted honey from. It's really strong tasting, but I like it. It has a molasses-y flavor. If I can find 3-ish lbs at a decent price, I'll get it fermenting.
