Pan frying the cheap cut would have helped a lot. The larger the area exposed to, and developing, the Maillard reaction, the more the taste also develops.

We need a Guga Foods Vs Pitmaster X. Guga and pitmaster are given a high quality, thick cut of maybe ribeye or something like that, and they cook it on the grill however they like. No sous vide. The test is how they cook it. Gugas season before and pitmasters season after. Then they get their pals to taste both steaks and see which they think is better. So the judgers will be Guga, angel, Maomao,ninja,pitmaster,Denise and Morrison.

I'm a college student in the USA, Marshall was spot on with the best way to cook a cheap steak, in the pan! Cast iron with a good layer of oil will give that good crust you like on higher end meat.

Your comment was silly because knowing the cost of something in regards to a commodity that is purchased by weight, should be made with a direct conparison of cost per weight unit. Whether it be pounds, kilograms, etc. You compare a 8 ounce steak to a 16 ounce steak and they are both the same price then effectively the 16 ounce steak is half the price of the 8 ounce, per pound. It's important information to have when making a "value" comparison. Otherwise you're comparing apples to oranges.

In the US besides the cut of meat, there are eight beef quality grades: Prime, Choice, Select etc.... Plus there are multiple cattle breed like Black Angus. Texas Longhorn Holstein. Then there can be the feed type grass, corn and then there are specific ranches that raise them. The price varies from stores and the region of the county as a result so a $12 steak has little meaning unless you want to say last week ribeye was on sale for $7.99

Ok, so, from a bistro chef perspective ... from a better raised steer, try steaks cut from the large end of a top blade roast. The end cap and tail are for great burgers or chilli. Special chef note: the large end of any primal muscel will always be more tender. BTW, salting before char broiling makes a more developed crust .. still using a finishing salt or better yet 'steak butter'.

8 euro for two thin sliced lean entrecotes (probably some 240 grams total?) is actually quite expensive. I usually pay somewhere around 12-20 euro per kilogram, sometimes even less if I go for cuts like blade (from which I cut flat iron steaks). I have tried various cuts of dry-aged but I didn't particularly like any of them. Best beefy flavour as far as I'm concerned is still hanger steak (which actually is in the lowest end price range) and a good second in terms of availabilty around these parts is bavette.

unless its Wagyu, just pay extra to get a thick steak. You will be able to get a much better crust on the outside and cook the inside perfectly medium-rare.

I don't know how available it is but korean Hanwoo beef is supposed to be right up there with wagyu, maybe slightly less marbling, so about A3 or A4 grade but more beefy flavor. I never see anyone cooking with it, so it may not be available outside of Korea, but I wouldn't know.

@@ministerpopilyo the technique is called "Dry Brine" you salt your meat 24h before use and let it rest in the fridge. the trick is that the salt pulls water out of the steak, but within the 24h the salted water gets back into the meat so its moist, tender and seasoned to the center.

I have developed a way to cook a good steak but an inexpensive steak start with cab top round 8oz.1 inch thick in bottom of pressure cooker evo and pat of butter,salt and pepper,few drops of tabasco,sear both sides,add4oz.water 3 oz.red wine your discretion,close pressure cooker when under pressure time 6 min.I need a tender steak,I am 83 and eat without top teeth on soc. sec.cant afford a wagyu,two fifty for the steak delicious although it more closely resembles roast beef.

i split a cow and it was 28 day dry aged, cut, delivered for 4 bucks a lb hanging weight, so no more than 8/lb finished cut. a steal. at Sam's club they have whopper tomahawk cut for 35 bucks, i think they are 3lbs or more. i think prime cut. US has much better prices for similar quality. keep up the good videos!

I need a sponsor and a place to buy that high end beef in the US. Outside of large cities it isn’t even available in better restaurants. After reading on Internet, last week I tried to put a pineapple in the blender and put my cheap steak into the marinade for 45 minutes. So, I grilled my cheap steak after removing all the pineapple and a very expensive steak. I was so surprised to see how much tender was the cheap steak. These guys are from the netherlands I believe. I've been to most of europe, and I would say netherlands denmark finland etc are expensive. Switzerland, luxembourg and some others are obscenely expensive. I, however, live in spain. Much more reasonable prices haha. My point is, it changes quite a bit from one place to another

$40lb for domestic beef is unheard of unless you are talking about Japanese that is 50% fat. USDA Choice is $7.99 for Ribeye or NY Strip. On sale, you can get it for $4.99lb. USDA Prime is much more expensive and $16-18lb sometimes 24lb at Whole Foods. This is the price in the Midwest yet it is not much different in Florida. Chicken starts at $0.19lb and pork is $0.29lb. 50% fat beef is good to try but it is not made for an American diet. Eating a 16oz steak is not that pleasurable the 4th time in a month. 15% fat is about the max especially if you are like me when I was in 6th grade and easily finishing off 32oz porterhouse steaks. In Asia and Australia(mostly for export), they inject powdered fat into the steak to make it look like USDA Prime, yuck.

it depends on where tbh. Here in NYC you can find USDA prime at Costco for around $10/lb for Ribeyes and New York Strips. Whole Foods prices when it comes to meats are actually pretty bad :(.

Sorry for my late question: Are we talking about price per steak? or price per kilo? I mean, 30$ for a steak can be somwhere between 70$ and 300$ per Kg (based on a 100g or 400g steak). So, it would really be interesting. Normally I buy Sirloin (in the whole) which is somwhere between 17 EUR at the moment (maybe because of the pandemic) and 34 EUR (for the same cut / same quality). And I can be sure that all my guests are really satisfied (if cooked right).

...and that beef at 9.50 euro per kilo is not Greek. It's imported from mystery sources, most likely Poland or Romania. There's not enough beef cattle raised in Greece to fulfill demand, especially at the low end of the market. Last time I got steak from the butcher here in Greece the tomahawk was about 12 euro per kilo by the way, and that's including a lot of bone. And a proper ribeye without bone is going to be quite a lot more than that.

If you are trying to achieve a crust, salt your steak 1/2 hour before grilling, salt it while it comes up to room temperature. It won't fall off this way - and you'll nail that crust every time.

Prime is at US thing, it not used in EU and a lot of other countries, but yes it is exspensive but supply and demand you know the cornerstone of capitalism :) or someting like that

In my opinion the Sashi is better than the Rubia but the video is a bit unfair for the Spanish one: they are both amazing!

I think you should compare the different steaks with the same cut Otherwise really hard to say...thou I believe the discount steak won’t be nice...but still thou from the same cut would be more convincing Still like your video
