Today I want to share with you the original toast recipe. A fluffy, delicious, homemade white toast, without preservatives, a snack for school, for breakfast or dinner. The structure of the crumb is dense, but at the same time tender and fluffy like a cloud with a distinct soft crust that keeps its shape.
This recipe is for a mold 20x11x11 cm. for 1 toast bread. If you want to make straight 2 then you double ALL the ingredients.

Weight - 530 gr.
We renew the leaven:
• 5 gr. sourdough - starter
• 10 gr. white flour
• 10 gr. water
Let the yeast rise and reach its highest point.
Firm sweet sourdough:
• 25 gr. 100% moisture sourdough
• 75 gr. flour
• 35 gr. water
• 15 gr. sugar
Let it rise for 10 - 12 hours at a temperature of 20-21 degrees (overnight) or 8 - 10 hours at a temperature of 23 - 24 degrees
DOUGH :
• 250 gr. white flour
• all sweet sourdough
• 20 gr. sugar
• 5 gr. salt
• 1 egg
• 100 gr. milk
• 25 gr. butter
For a polish (optional)
• Some milk
Leave in a warm place -28 degrees for 2-2.5 hours (oven with a light bulb) fermentation
Leave in a warm place -28 degrees for 4 - 4.5 hours (oven with a light bulb) maturation
Bake at 180 degrees, up or down resistance for 40 minutes
!!! If you don't want egg in the dough, then remove the egg and add 60 g. milk
