Though I am from West Virginia I worked around Chicagoland for 30 years. Like you I am a Bayless fan. I would like to let you know that I found I can sub dandylion leaves for cilantro equal amount in salsa...for those who think cilantro taste like soap...Try it out and let me know what you think.

What? I love this! Now I need to go find some dandelion leaves. I have some in my yard but according to my plant identifying app, they aren't true dandelions. I can't wait to find them and try it! You are brilliant!

According to google: "Shojin ryori" refers to traditional Buddhist cooking. It's made without meat or fish, and instead focuses on seasonal vegetables and mountain plants. Strong flavors such as garlic and onion are also avoided. Google also says this cuisine is roughly 800 years old.
