This whole Thai fish recipe is usually done with green mango, however i am using green apples to add the classic Thai flavours of sweet, salty and sour.
Recipe
Dressing:
20g (0.71oz) palm sugar
1tbsp hot water
1 1/2 tbsp fish sauce
1/2 lime juice
Whole fried fish with green apples:
1 whole fish such as snapper or sea bream
1/4 cup potato or corn starch
300ml (10.1fl oz) vegetable oil
1 shallot, sliced
1 clove garlic, chopped
1 spring onion, chopped
1 large red chilli, deseeded and sliced
1 green apple, sliced
1/2 bunch coriander leaves
1/2 bunch mint leaves
fried shallots, store bought
roasted cashew
1. Dissolve palm sugar in hot water, combine with fish sauce & lime juice
2. Score the fish on both sides and coat with potato or corn starch
3. Heat the oil in a wok to 180°C, fry for around 10 min. or till golden brown
4. Combine all vegetable, herbes and dressing and toss to comine
5. Spoon the green apple salad over the fish and garnish with fried shallots and roasted cashew nuts
