Fresh milled wheat has so many health benefits and combined with sourdough, my personal belief is it’s the best bread you can have. But it’s a bit of a different beast than regular sourdough so I thought I’d do a separate video from my first sourdough tutorial so here it is!
WW Sourdough Recipe:
Ingredients:
250 gm starter
700 gm water
900 gm ww flour
90 gm honey
24 gm of salt
Directions:
- Mix starter into water
- Add in flour and mix till combined
- Let rest 15 minutes up to an hour
- Add salt and then add 50 gm of water to help incorporate the salt. If dough is too tight, you can add more water
- Let rest 30 minutes
- For the next 2 hours, every 30 minutes, fold dough on a quarter (fold dough, turn bowl a quarter turn, fold again until you have completed a full turn of the bowl)
- Let rise for an additional 5 hrs (or 8 hours total from start of bulk fermentation)
- Fold dough out onto counter, split in half and form 2 boules.
- Let rest 20 minutes
- Form boule again and place in loaf pan with parchment paper.
- Place in fridge over night or at least 6-8 hours.
- Preheat oven to 500 with a pan of water in the bottom of the oven.
- Place loaf in oven and immediately reduce heat to 450.
- Bake for 25-35 until crust is golden brown.
- Let rest for 30 minutes to finish cooking before cutting into it.
