@@UltraAar It's also healthier. These "plant based" meat products are prepared using industrial processes. I don't know if this guy's ingredients are any better than the stuff you buy at the store, but it still looks gross. "Plant based" and "contains no meat" are literally the only statements that are sort of healthy sounding the manufacturers can actually say. There's a point where the chemical refinement processes that use toxic catalysts and reagents divorces itself from anything we think of as natural. The "meat substitute" products at the store have as much in common with a plant as orange soda has to do with oranges.

One great thing about what you are doing is that while this is "fake" meat, think of the shelf life. If we have a meat shortage, you could make this so far down the road because the ingredients are so shelf stable. Looks great!

Fake meat also does not have the "bloody" bacteria which makes food rot so fast, and not as much cleaning compared to actual meat. To think how much blood used to flow on my kitchen sink.

Here's the list of the ingredients for an eventual shopping list: For the fat: 100gr of water 1 teaspoon of methylcellulose 300 gr of refined coconut oil For the meat : 200 gr of TVP 2 teaspoons of beetroot powder (for color) 2 tablespoons of methylcellulose 30 gr of protein 3 teaspoons of mushroom seasoning (or MSG) 2 tablespoons of nutritional yeast 1 gr of thyme, garlic powder and onion powder 2 Cups of water 2 tablespoons vinegar 2 tablespoons of soy sauce

Thank you for showing us what goes in to many plant based meat substitutes. I have Short Bowel Syndrome, do to a surgery from a ruptured appendix. I enjoyed a veterinarian diet prior to my surgery with no issues. ( I ate some dairy so I was not vegan) Since my surgery, I could not understand why meat substitutes caused me to have debilitating pain. I now understand that many products have methyl-cellulose in them and that is likely why. Methyl-cellulose is a strong laxative and it might be a good idea to mention that when making future videos.

@@JustMeELC Part of the reason methyl cellulose is needed in plant-based meats is to provide thermal gelling; however, with the citrus fiber, texture can be added that does not breakdown over time nor with heating. Ingredients that can be replaced include carrageenan, gellan gum, mono and diglycerides, and lecithin. For home made meat substitutes, cooked, then ground or mashed beans can be used to give a meat like texture and bind with the oils. I am not a doctor or expert, just someone who can not consume a high fiber diet.

@@richardlutz5458 Thanks! I just figure if I'm trying to go meat free it kinda defeats some of the purpose for me if I'm adding chemical or scientificaly invented additives I know nothing about. I use alot of rehydrated tvp in place of where I would have used ground beef in spaghetti, chili etc, but would love to be able to make a ground beef alternative, that I can afford lol, to use to replace it entirely. Seems this might just fit the bill so I wondered if just leaving that out or substituting tvp with the coconut oil would also work.

Well done! I made this ‘meat’ yesterday and love it, the burgers & meatballs were amazing! The burgers were easy to form & held up well in the frypan. My hubby thanks you, he was amazed. Methyl cellulose was a little tricky to find but for Aussies, The Melbourne Food Depot(online orders) stocks methocel & the beetroot powder. Thanks again❤️✨

Actually since that's the most affordable meat replacement where I live I've beeen eating TVP for over 3 years whenever I feel like eating meat, now my college friends (not even vegetarians, meat eaters) have been buying it and eating it because it is cheaper and healthier than regular meat and they like it's flavour ♥️🥰

@@l-schm I think KZitem is a generally better medium than television for cooking.... And many other things. Trying to fit all recipes into the exact same length of episode makes things feet unnatural, and elements such as character drama and narrative tension (which leak into more and more shows now since reality TV got its grip in the 2000s) take away from the learning experience.

Marmite versus nooch is a radical flavour dichotomy. Marmite is also highly loaded with salt. It's a good choice though. UK veggies were flavouring our nut roasts and mushroom stroganoffs with it decades ago.

That ground looks fantastic. Those silicone pot holders work great to move a hot pan/pot but not for holding it to empty or show off your creation.

Im excited to make this. Because as much as I love the packaged veggie meats that are available on the market right now most of them also use a lot of plastic in their packaging and as somebody who's trying to reduce their carbon footprint as well as eat a healthier plant-based diet this is actually a little bit something that I can use to be able to do the best of both worlds

I just tried making this today. It took a little planning, but it was really pretty simple to put together, and the taste? O.M.G.! I actually think it tastes better than BBs and IBs. Although to be fair, I've never actually tasted IBs (I don't do GMOs.) I have the extra burgers in the freezer, and I plan on making a batch for my daughter-in-law and granddaughter, who are both vegetarians. I had to order the methylcellulose and the beet powder online, but the rest of it I was able to find at my supermarket and an Asian grocer's. You've outdone yourself on this one. 10+++. Thank you!

On the way to trying to create jerky, I came up with philly cheese steak, by frying a really thin square. I flipped it and fried the other side. When done, I sliced the square into strips and it became bacon. Next, I dried out the strips in the microwave (2 min per side) and now I have jerky.

Also, methylcellulose it's readily available in most pharmacy aisles as a natural laxative. Get the unflavored kind; orange meat might be weird.

Usually the laxative version is a lot more potent and contains other ingredients, I strongly wouldn’t recommend it unless you want to have a bad night.

I am making this for myself, but I'm not vegan (or vegetarian). I'm just trying to save money on ground beef, and saving animals is a bonus :). Can I use an egg in place of the pea protein? That seems to be the most expensive part of this burger (per weight), and eggs are super cheap. Maybe removing some of the water to compensate for the added moisture?

Update: Here is the low budget vegetarian version: - replace protein powder with 3 eggs - replace vinegar powder with 1 tbsp vinegar - I only used half the liquid smoke. Mine was very strong. - Reduce water so that you only have 1 1/4 cups of liquid ingredients total (I put everything into a measuring cup and did the water last) - 1 more tsp methylcellulose in the meat mixture. This firms it up a bit more. - Use vegetable oil instead of coconut oil. Just need to freeze it a bit longer, and be quick with it when mixing it in so it doesn't melt. Also helps if you refrigerate the meat mixture too. - omit the beet powder. It's only there for color anyways I am a meat eater, and I can tell you that if you make these well, they will taste just like meat. It may need a bit of tweaking to get right. If it is too firm, don't use as much methylcellulose/ eggs or increase water. If it is too soft, bump up the eggs/ methylcellulose, or reduce the water. Just depends on your preference.

Grew up Adventist and TVP was always a staple for meat dishes. It's so funny seeing everyone going veggie or vegan these days when it's all I've ever known and for which I was mocked during my childhood... Many of my childhood schoolmates are bigger than whales now and look 15 years older than they are. Guess that vegetarian and vegan lifestyle was the better choice after all.

Have you tried gardein? There meatballs and sausage is AMAZING. The sausage is chopped up tho and spicy. But pretty damn close to the real.thing. there ground beef is what I use for tacos or.sloppy Joe's. Which I made some the other night .. and legit tasted like real beef sloppy joes. But it's all about the seasonings! I tried beyond meet burger awhile back.. and I hated it.. idk if its changed since.. people seem to like it? But yeah try gardein. They are also my fav chicken. I'll take the chicken scalopinis and make chicken fried chicken. Comes out great. (Fish sticks are bomb also but hated the crab cakes they make.. Walmart also sells there breakfast bowls..which are the best...) anyway good luck!

I love Gardin chicken products, I love their chopped up sausage in pasta or with rice but I have not tried their beef crumbles (I usually use light life crumbles)I like the beyond Italian sausage.... so yummy! But beyond meat is not that good... I can stand the burgers once in a while (especially from Carl’s Jr.) but definitely would never use it in cooking again after my meatloaf fiasco lol

I did a side by side comparison of Beyond Burger vs. Gardein's Ultimate Beefless Burger on Facebook. I didn't dislike either one. I liked the texture of the Gardein better, but Beyond was less salty. Gardein is a better value; you get four in a bag as opposed to Beyond Burger's two per package.

I usually replace any chemical that would “make things firm” with potato starch. When cooked, it turns into a thick jelly that then looks like gummy worms texture 😅 . . . (I mean instead of that cellulose stuff)

Thats a great replacement!! Potato and tapioca starch both work pretty well for a cellulose replacement! I do believe cellulose has a stronger resemblance to the real thing, but I wouldn't pass up a burger made the other way hahah

He has used veg starches many times, but thought trial and error he got to an optimal binder. There is nothing wrong with Methylcellulose.

I microwaved a whole 10 oz bag of pea protein based ground beefless taco vegan food from walmart that cost less than $5 and microwaved a 4oz packet of Diaya fiesta (jalapeno) nacho vegan cheese on top of it, before this video was halfway through.

I purchased this stuff and have tried two recipes, two times each. Twice for this and twice for the nuggets. All four times, the end result was a mushy mess. It never got firm. It actually is more firm without the methylcellulose. It just comes out a mess. I even added an egg replacer as a binder for half of the second attempt. Just as mushy as could be.

Update: I added cheese to see if that would help (I'm vegetarian) and it was no match for the mushy nonsense. It literally had no change in end result. No matter what, the texture and lack of ability to stay together is exactly the same.

I think I'll stick to bean burgers and venison burgers. Way less complicated. That meat loaf looked good though.

Just a side note: Methylcellulose can cause fecal impaction, intestinal obstruction, choking, allergic reactions such as hives, difficulty in breathing, swelling of the face, lips, tongue, or throat, severe stomach cramps, and rectal bleeding. So there's that...

You basically just need an oil that's solid at room temperature. Maybe try cocoa butter? Otherwise, you could just skip the step with the oil/methylcellulose pucks (the burgers would have less of a "juicy" meat factor, but you can potentially brush the outside of the patties with an oil that's okay for you to have a little of that effect).

If u make vegan mozzarella. I have a theory use calcium chloride agar veggie lipase culture or the fermented tofu And the base being tofu nutritional yeast potato and tapioca starch white miso vegan butter and the lactic acid

I would love to know the caloric properties along with nutritional. I’m not a vegan but, I do only eat seafood as a meat protein. It’s so hard for me to find a protein that so low in calories and so high in protein and omegas. Would be very interested in making this if it works with my macros!!! I wonder if you can just use the coconut grease instead of the methocellulose. Because the oil will become firm in the refrigerator?

From what I understand, methylcellulose would kind of act like the opposite of what coconut oil would. It actually becomes more solid as it's heated up, while coconut oil just melts. If you're looking for a alternative, though, Sauce Stache did a video comparing the similarities of methylcellulose and dried orange juice pulp, so maybe check that out? Either that or just try potato starch. :)
