I think that depth is the mark of great successful content creators: one that will have a net positive impact. Imo its almost "egotistical" to think of your ratings as offensive because it implies a level of importance that they just dont have. Its a for fun thing, and your rating obviously mean nothing real because as you said the food is made out of context/imperfect etc etc. Its like doing a cereal tier list, i wouldnt feel bad about the companies that im rating low because i would just be sharing my subjective opinion, without any sense of authority. But if you dont feel confortable with it then yeah, just dont do it.

I would be happy to supply you with some traditional dishes from my home region, the black forest, most of them you won't find online at all. Some of them I haven't even heard from anyone but my grandma, like "Gmoggelts", a poor people's potato dish that's absolutely delicious.
@malkrenkdizoniro7941
2 ай бұрын
Tell me about gmoggelts, how is it made?
@juliusnicolas
2 ай бұрын
@@malkrenkdizoniro7941 From what I understand, Gmoggelts is essentially a poor people's food of the inhabitants of Freiburg (im Breisgau) where my ancestors lived. The city people had less fresh produce than countryside people. So what they did is stretch their few potatoes with flour mainly and add things to spice it. The recipe as my grandma and dad roughly make it is such: Take a few cooked potatoes from the day before or better or two days, peel them if you want and mash them. Then add a finely cut onion and flour of your liking while mashing with your hand, until the dough crumbles into rough round pieces no bigger then an average cherry. These are the "moggels", which is a word of our alemannic dialect for something roundish, rough, very hard to explain. A well fed baby can be tenderly called a "moggel" aswell, or actually, a "moggelli", which is the cutened diminuitive. So essentially, you are "moggeling" the potato, onions and flour. Therefore it is "G(e)moggelts" [ge or actually g' indicating the participip form in german/alemannic, the english version would transcribe to something like "moggeled"]. After this linguistic excourse, you add salt and looots of freshly graded nutmeg. Pepper is optional. Then you fry these different size moggels in a pan in a good amount of oil or vegan butter of your choice until golden and with brown spots. Serve with applesauce, a salad or sauerkraut or any sauce or vegetables really. My grandma usually just did a juicy, savoury lettuce salad with it. Gmoggelts is like a mix of Brägeli (Black Forest style fried potatoes) and Bubespitzli/Schupnudeln (Black Forest thick potato noodle/gnocci) and evens bares some resemblance with Dummis/Kratzete (Black Forest thick torn apart pancake). It's fried potatoes, gnocci and pancake all in one dish! ;) ;D And do not save on the nutmeg, there needs to be loads on it my dad never forgot to mention (An arabic chef one told me it's a way to cheat cooking because it covers over unpleasant aromas mostly when something is burnt. Souther German cuisine is using it a lot, I guess it might secretely prove that as our cooking culture and skills are not as developed as the arabic or other cuisines). Hope this helps. Cheers, Julius
