Hello Dr Gundry, I follow you already for many years and have read some of your books ❤❤ In Europe, Spain, where I come from, we usually cook everything in extra virgin olive oil. It does break the bank, but we believe is healthier. Would you agree? Or anytime we heat up the oil we basically spoil it? Thanks 😊😊❤❤ And btw, welcome to Spain whenever you want to visit 🎉

Olive oil is great on your salad or drizzled over your foods, but definitely not for frying or searing. You could use it to fry eggs since you don’t need high heat for that. Better yet use clarified butter or ghee.

I don't think Cate would object to moderate consumption of cold pressed oils. The culprits are the extraction and refining process and heating, which oxidises the highly reactive PUFAs.

What about palm oil?
@romanr9977
3 ай бұрын
Bad because orangutans are killed. Especially mothers, leaving little orphaned babies 😢 orangutans are critically endangered. And if that’s not bad enough, it causes deforestation because tropical forests are cut down, causing biodiversity loss, to replace with plantations of oil palm trees. And these plantations are responsible for huge carbon emissions because the vegetation from the rainforest that is cut is burnt off. So every which way it’s lose-lose. It’s a refined oil too so not good.

The seed oil is extracted by pressing and using organic solvents (hexane). An oil is obtained that is then refined. It contains more polyunsaturated and less monounsaturated fatty acids than olive oil, so they are more unstable, oxidize more easily and are less resistant to high temperatures when cooking. If desired, they can be used cold. It is NOT advisable to heat them as they have a freezing point. low boil. On the contrary, olive oil is a fruit oil, with a high boiling point, 180º.
