【KIMCHI + BOSSAM RECIPE:】
🥬 Cabbage preparation : slice one large napa cabbage into strips, add to a bowl, and pour salt water on top (1 cup of salt + 4.5 cups of water). Let sit for approximately one hour (stirring after 30 minutes). After 1 hour, rinse cabbage to remove salt and then strain thoroughly.
🥣 Kimchi seasoning :
- 1/2 onion
- 2 tablespoons cooked short-grain rice
- 6 cloves of garlic
- 1 tablespoon of ginger
- 1 1/2 tablespoons of brine shrimp
- 8 tablespoons of Korean red pepper powder
- 3 tablespoons of anchovy sauce
- 3 tablespoons of Korean plum extract
- 1/2 cup of water (depending on consistency)
Combine all ingredients in a food processor until smooth. Pour over cabbage and mix well. Pack in airtight containers and store in the fridge.
For extra flavor and crunch, you may also add the following:
- A small bunch of Asian chives (buchu) chopped into 1-2 inch pieces
- a small bunch of green onions both chopped into 1-2 inch pieces
🥓 Pork belly :
Add the following to a medium-sized pot filled with water and bring to a boil:
- 3 tablespoons of Korean doenjang
- 1/2 an apple
- 1 onion
- 1 bunch of green onion
- 3 bay leaves
- 1 teaspoon of peppercorns
- 1/2 cup of soju (or other similar alcohol)
Wash pork under cold water and then add it to the boiling pot. Cover and let simmer for approximately 1 hour. Remove pork, allow to cool for 10-15 minutes, slice and serve.
