[Neopolitan Deep-Fried Tofu Pizza]
[Ingredients]
⦁For the dough
160g of bread flour
120g of water
5g of salt, 5g of sugar
2g of dry yeast
15ml of extra virgin olive oil

1 lemon
1 packet of firm tofu
1 can of Paik’s Ham
Pecorino Romano
Parmesan
Provolone (to your preference)
(Recommend a 1-1-1 mixture)

2 cloves of garlic
50ml of extra virgin olive oil
400ml of tomato purée
Salt, sugar, pepper
⦁Other ingredients
Oil for deep frying
Basil (to your preference)
[Instructions]
1. Make the dough by mixing all the dough ingredients and proof it in a warm steamer (45 degrees / 20 minutes) or leave it to rise at room temperature for 2 to 3 hours
2. Mash the tofu for the pizza filling and get rid of all excess moisture
3. Add in all the cheese, thinly sliced ham, and lemon zest in the mashed tofu, then mix
4. Add the filling into the doe, form a shape, and deep fry it
⦁When deep frying, start the oil temperature at 140 degrees and finish at above 180 degrees (Deep fry for 3 to 4 minutes)
5. Serve with the marinara sauce made with tomato and garlic
⦁Add minced garlic, olive oil, tomato purée, salt, sugar, pepper, and cook
6. Place the fried pizza on top of the sauce, top it with basil, and enjoy.
