A decadent and delicious fancy French sandwich is not something that you would normally think of when trying to stick to a budget, but this open-faced Croque Monsieur is here to change your mind! We are saying “no” to expensive proteins and long ingredient lists so that that we can say a resounding “oui!” to some freshly grated Gruyere cheese and make this savory sandwich dream into a reality!
This thing is completely irresistible thanks to a super creamy cheese sauce that gets melted to bubbly perfection in the oven. And let me tell you, you will be shocked by what a little store-bought mustard can do to elevate an entire the flavor profile. Let’s get cooking!

How to make Croque Monsieur...
You'll Need:
4 ½ - ¾" slices white bakery bread
2-3 tablespoons room temperature unsalted butter for spreading + plus 3 tablespoons more, separated
3 tablespoons all-purpose flour
2 cups whole milk warmed
1 ½ cup freshly grated Gruyere cheese, separated (you could also use Cheddar or Monterey Jack)
¼ cup freshly grated Parmesan cheese
½ teaspoon Kosher salt
Generous pinch of black pepper
10 ounces deli ham, torn
⅓ - ½ cup of whole-grain mustard
2 tablespoons minced chervil Italian flat-leafed parsley
To start off, preheat your oven to 425°, line a baking sheet with aluminum foil, and lightly butter both sides of your sliced bread.
Place a skillet over medium-low heat and, once it has comes to temperature, carefully toast both sides of each slice of bread, working in batches as necessary, so as not to overcrowd the pan. When they have reached a nice golden brown, transfer them to a wire rack to cool.
Next up, you’re going to add about 3 tablespoons butter to that same pan and allow it to melt. Once melted, add in your flour and whisk into a paste. Then, you can begin adding in your milk, one big splash at a time, and whisking well after each addition.
Increase the heat to bring the mixture to a simmer and, stirring it frequently, allow it to simmer for a few minutes, or until it has thickened a little.
Once thickened, remove the mixture from the heat and stir in freshly grated Gruyere cheese, Parmesan cheese, salt and pepper. Set that aside and it’s on to the assembly!
Place your slices of toasted bread on the prepared baking sheet and give them a liberal smear of whole-grain mustard before dividing the ham up between them. Now you will add a generous spoonful of your cheese sauce across the top of each one and finish them off with a sprinkling of your remaining Gruyere.
Now just pop them in the oven for about 12 minutes or until the cheese is nice and melty. Feel free to sprinkle them with a bit of chopped parsley before serving and enjoy!
