Happy New year! Dear colleague, beast wishes you and your family in this year. I checked your videos about cooking. I think you will be interesting to try specific Balcanian dish from red meat what calls in internet "Яхния" (Yahni). Internet pecepts are not too accurate. But this is realy tasty and simple to do (with some hard part for sure). So, you need meat, onions, tomatoes, salt, pepper, some fat (animal one or cooking oil) and seasoning (thime or something like it). This is all. Hard part - clean A LOT onions (more than meat) and cut in small pieces. Cut meat on 50-100 g. pieses and fry lightly. Put meat and onions in a pan under cover, with salt, pepper and some fat. Put on a little fire. Onions have start to juice in 10 mins. After it you add to pan spoon of floor, and some tomatoes in slices. Onions (mostly) and tomatoes should be enough to their juice cover meat in end. Mix it and leave to cook for 15-20 mins. After it you add thime (or another seasonings) and leave it on fire for 1.5-2 hours, until the vegetables (onions) are almost disolved. You will get "meat in sauce" what can be eating with bread or side dish like rice. Meal idea is meat cooking in onion and tomatoes juice without any water and even cooking oil (if you have animal fat to start onions juicing). This is extrimetly tasty meal. My family stoped to eat meat was stewed in water after I first time cooked it. Have a nice year and thank you for your videos.

It makes me happy to see you are still uploading on this channel, Wako-san. I got a Bark River Aurora Scandi in Magnacut and a Puukko in 3V, they are my absolutely favorite knives. It is respect and consideration for the environment to leave wild meat available for other animals to feast on. If you have seen any other videos from Dr. Wako you would know that leaving some meat and carcass is often part of his strategy. Nothing goes to waste out there!

How has the diamondblade knife held up? Looking for info, but I dont see much online. I saw your video from 11 years ago, and I don't see any mentions since then when I search your channel. Do you still think it's worth it?

I suppose when you can hunt unlimited deer in Japan you can be selective to just take the prime parts, and not even have to gut the animal to get them. But the few deer I've taken when much younger about 35 years ago, we took the entire doe on a permit back to our home, and hung it in the cold garage for about a week to age it. I can assure you we did NOT waste a bit of the animal, (even tanned the hide and later used the leather), and it just seems a bit wastful to havest just what you do. On some level, personally I could not justify killing such a beautiful animal for so little meat taken; for I would feel I disrespected the life taken for so little. There is quite a lot of stew meat that gets tender with slow cooking from the rear legs, and the liver and heart are worthwhile also...
