The monthly commitment to camp in the 4Runner continues through winter. December's trip takes me to Catalina State Park, just north of Tucson. I added some cold weather (by AZ standards) upgrades to try out.
Fun includes a gorgeous hike through saguaro cactus to Romero Pools, a morning walk, and watercolors.
Campfires aren't allowed here, so that means no pie iron cooking. I had to get creative with my cooking, and find something to do at night, since I can't sit by the fire.
The menu:
12v electric lunchbox breakfast - brown rice, egg, and miso porridge, with smoked pheasant and apple fig compote
Picnic lunch - focaccia pressed sandwich
Dinner - beer cheese fondue + beer
Dessert - chocolate fondue + wine
Snack - Tajin popcorn + hot toddy
Breakfast - protein oatmeal + coffee
Road food - Sonoran hotdog
