I worked at many restaurants just like these and it was not an enjoyable experience. I have since been working at a very high end restaurant for just over a year and I have been loving every minute of it. I used to hate cooking but now I have found my own passion for it. I have been cooking for 14 years now and I can finally say that I am happy to be where I am at. I love the staff and I love my job and I've never felt like that before. Gordon is absolutely right on every point he makes. Frozen and related food is no way to run a successful restaurant. We make 90% of our menu by hand. There is one a few things that are in a jar pr a can or a package. We are a scratch kitchen that makes mostly from scratch. I love all of it and I'll continue to do it until the day I die.

On a serious note, as someone who worked at a sushi restaurant, it is illegal to serve sashimi, sushi, or any other kind of raw fish in the United States that has not been frozen at -7°F for at least two weeks. It's required by the Health Department as a prerequisite to kill all parasites, mainly tapeworms. Maybe that's not the legal requirement in the U.K., and obviously fresh, never frozen, is better, but it's not fair to criticize an American restaurant, serving raw fish, for the fish being previously frozen. They're bound by law.

by fresh, he means thawed out from when they are flash frozen on the ship. Even at a local seafood market, most of the fish is caught, then frozen on the ship.
