Same as a Wendy's for the most part, except, the burgers were pressed a lot lighter. We kept them as thick as possible to extend the cooking time, unless we needed to deliberately fast-cook them for a sudden rush. And if they turned into hockey pucks from overcooking, they end up getting completely chopped up and re-boiled up to a fluffier texture, then used as chili meat. (Edit: I say re-boiled because the holding tank ran hot. If the display said 180 they'd be simmering, so we were technically out of compliance there.)

For real, smash when first putting it on the flat top, but not after it's been cooking q while and flipped. All the juices get pushed out for no good reason smh

Looks amazing. I'd be tempted to pull those burgers off a little sooner but I'm sure you're doing exactly as trained and food safety is no joke for any business like this.

That’s why I don’t eat there, over cooked and pressing all the juices out of the burger. I need flavor and juice.

@@kizzlekakes That's actually why I don't eat there, maybe once every couple years. They are usually pink in the center. You don't eat pink ground beef. Only steak you can eat pink or nearly rare. The little "juices" are not worth risking a trip to the hospital with a horrific stomach bug. Save your money and enjoy a good ribeye

@@2jzandys444 Not really the same, but where I work, there was a brief period where the meat that the cooks had was ever so slightly pink even after being completely fully cooked, because the meat they had at the time, for that period of time, had some sort of dye in there. Maybe there's something similar going on there?

@@2jzandys444 You can eat a little pink in your ground beef if it has been kept well and food poisoning rarely necessitates a hospital visit. Medium rare burgers are fucking delicious, but ill only order it at a nicer restaurant or if I'm cooking it myself and I know its quality ground beef. Also, steak tartare is raw ground beef, but presumably they grind it there so its probably a little safer.

It’s an interesting kitchen design, with the grill behind the buns and the bag station separated from the fry station. At Culver’s, the grill was next to the boxing/wrapping station, the buns were handed on a tray to the grill person, and the fry dump was next to the middle person who handled the finished items, instead of being separated like here. Culver’s had a closed kitchen where the registers and whatnot were separated tho

@@theshark84724 The thing is McDonalds is garbage quality compared to five guys which actually tastes like a nice restaurant burger and not drive-thru fast food. You get what you pay for and even though Five Guys is expensive, it's not overpriced compared to any burger place of comparable quality that you can easily find across the country.
