There is a reason why the duel against Maul is called the duel of the fates. It’s the fate of Anakin

Qui-Gon was definitely a better fit for training Anakin, as he saw his potential even as a child

I think Qui Gon probably would’ve left the Jedi with Anakin, since he would’ve been understanding of his emotions and Padme’s pregnancy. But Palpatine would need to rearrange his plans considering that Anakin would’ve been out of his planned position to fall to the dark side.

Anakin was being manipulated by Sidious, but he had made plenty of mistakes on his own, too. The massacre of the Sand People was all his doing. Even if Anakin did tell Qui-Gon about his nightmares and they managed to rescue Shmi, his dark tendencies would have resurfaced later, possibly with even WORSE consequences. I think Anakin would be at a constant risk of falling unless he learned 1. to let go of his attachments and 2. to control his anger and his violent tendencies. A Jedi can feel destructive emotions but must not let themselves be ruled by them. Qui-Gon in Legends doesn't have the best track record with his padawans: there's very little data on Feemor, Xanatos Fell, and Obi-Wan had a very difficult start. Anakin's master should be someone with a lot of experience with the Dark Side. As much as Yoda is often criticized, he'd be competent enough to keep Anakin mostly in the Light - if he could be convinced to take him as a padawan to begin with. Ironically enough, had Palpatine been a Jedi, I think he'd be the perfect master for Anakin.

This is definitely an interesting main point you make here It's interesting because Anakin himself likens Obi-Wan to a father in Episode 2, but he says it in a negative way. He's overbearing and holding Anakin back, in his eyes. But that's probably because even Anakin himself is acknowledging a father is what he needed, but, again, Obi-Wan sees them more like brothers, perhaps because Qui-Gon was the one who was supposed to train Anakin, and Obi-Wan views Qui-Gon as a father as well. Qui-Gon would have fully accepted the role and been a positive father figure to Anakin, whereas Obi-Wan is more like a brother who's taking the role of a father out of duty, out of a promise to Qui-Gon rather than of his own volition.

If qui-gon lived, anikin wouldn’t have turned, yes, but I think qui gon was fated to die in the duel of the fates.
