Jimmy, may I say the level of Spatlese is sweet by adding sussreserve to a dry Spatlese? Also, during harvest time, grapes are picked early in the morning (6-9am) to keep the aroma to avoid oxidized and fermentation temperature needs to be cool which help to retain fruit aromas that could used to protect/enhance the aromatic.

A spätlese not stating “trocken” on the label could be medium-dry and medium-sweet as well as sweet, is that not correct?

Typically they are sweet - but in some vintages they could be a little less or more

Spätlese can be dry to sweet, so yes, you are correct. Spätlese ist not at all a safe indicator of sweetness in wine. The "Prädikatsystem" (thats where the term ist from) classifies quality by sugar content in the harvested grapes. All levels up to and including "Auslese" can be made in dry to sweet styles.
