Xanthan gum is the result of a bacterial fermentation process. It is produced when the bacterium Xanthomonas campestris is grown in a medium that includes sugars and other nutrients.
Sometimes, allergenic substances are used to nourish Xanthomonas campestris, such as: soy, dairy, wheat or corn, so you should pay attention to the labeling of products that contain xanthan.
In a surprising study, researchers observed antitumor properties of this thickener and when administered orally, it reduced cancer growth and prolonged the life of mice with melanoma.
Evidence has only been found in humans of: Increased bile acids in the feces, increased production of feces with a higher water content and decreased blood cholesterol.
There is not enough data to confirm the connection between this xanthan gum and necrotizing enterocolitis. However, research suggests it may have contributed by increasing the amount of short-chain fatty acids in babies' still-immature intestinal tracts.
Guar gum is another additive used to thicken and stabilize foods. Guar gum is made from the seeds of Cyamopsis tetragonoloba, a legume.
Xanthan gum doesn't appear to cause any harm in healthy adults, and while those with severe allergies or digestive problems should avoid it, it's probably okay for most people to consume it occasionally.
