*UPDATE* I have upgraded to a Galaxy S7 Active (G891A) running Android N 7.0. I can confirm the app still works. However, I have rooted my phone and updated to the USB/BT Joystick Center 2015 app so I can use Joy2Touch features.
My phone is a Galaxy S6 Active, model G890A (AT&T), android version 6.0.1 marshmallow. I assume this should work on most of the galaxy devices.
The keymapping app is called USB/BT JoyCenter. I used Lucky Patcher to remove google play license verification on the app, because it has been pulled from the playstore and it is getting harder to find.
The emulators I use for the demos are MegaN64 and DraStic.
ANTIVIRUS WARNINGS: This app may trigger your antivirus on your phone, but it's only because I had to use Lucky Patcher to remove the playstore license verification. Before I patched it, it passed the antivirus scan. This is a safe download link, it's coming right from my google drive.

I haven't tested this with a wired 360 controller but don't think it will work.
