材料:
豬皮 1斤
炸魚蛋 1斤
大蘿蔔 1個
蒜茸 3湯匙
紅葱頭 3湯匙
咖喱粉 3湯匙
乾辣椒 適量
蝦米醬 1大湯匙
乾炸蝦米 1大湯匙
糖 1茶匙
蠔油 2湯匙
水 適量
做法:
1.豬皮洗乾淨後,放入滾水煮一兩分鐘,用凍水清洗直至冷卻,然後瀝乾水切塊備用
2.蘿蔔去皮直至見到透明肉質,切塊備用
3.燒紅鑊下油,先爆紅葱頭,再加入蒜茸,爆香之後加入咖喱粉
4.加入豬皮翻炒,再加入適量水分
5.加入蘿蔔及魚蛋,加入乾炸蝦米及蝦米醬,煮至蘿蔔、豬皮腍
6.最後加入蠔油調味
Curry Fish Balls and Pork Rind
Ingredients:
Pork rind 1 catty
Deep fried fish balls 1 catty
Large radish 1 pc
Minced garlic 3 tbsp
Shallots 3 tbsp
Curry powder 3 tbsp
Dried chili Some
Sambal 1 large tbsp
Dried fried shrimp 1 large tbsp
Sugar 1 tsp
Oyster sauce 2 tbsp
Water Some
Steps:
1. Clean pork rind, boil in water for 1-2 minutes, rinse with cold water until cool, then drain, slice, and set aside.
2. Peel radish so that the clear, white body is exposed. Cut into pieces and set aside.
3. Heat pan with oil, first sauté shallots, and then add minced garlic. Once aroma is released, add curry powder.
4. Add pork rind to the pan to sauté. Then add water.
5. Add radish, fish balls, dried shrimp and sambal. Cook until radish and pork rind is tender.
6. Lastly season with oyster sauce to taste.
