椰漿飯是马来西亚的国肴(馬來語:nasi lemak)是在馬來西亞、新加坡與汶萊常見的美食,是馬來西亞的非正式國餚。在馬來半島東海岸登嘉樓與吉蘭丹,「搭岡飯」非常普遍。在印度尼西亞也有類似這樣的美食,稱作「烏督飯」。
在马来文化根基里,椰浆饭的马来文拼音是Nasi Lemak,Nasi 是饭,Lemak 是脂肪,指的是椰浆。这个饭的名称来自它的烹饪过程,那就是把饭浸泡在浓椰浆里后再把饭与椰浆的混合物拿去蒸。有时候,会在蒸煮过程中把打了个结的班兰叶放入饭里,以增加它的香味。必要时,也可加入其他的香料如黄姜与香茅,以给于附加香味。
椰浆饭传统上被用来当早餐吃的,而它也在清晨开始就在马来西亚的路边档口卖出。它通常是被报纸、麻浆纸或香蕉叶包住卖的。无论如何,也有些餐厅把它盛在盘上当午餐或晚餐吃,让它有机会被论为一大佳肴。
《椰浆饭食谱》《Nasi Lemak Recipe》
椰浆 四百毫升
Coconut Cream x 400ml
辣椒酱 一百四十克
Cili Boh Paste x 140g
蒜米 一颗,红葱头 五颗
1 Garlic, 5 Shallots
阿三果片
Asam Gelugor/Asam Keping x2
黄大葱 两颗
Onion Yellow x2
江鱼仔 五十克
Anchovies x 50g
花生 两百克
Peanut x 200g
鸡蛋 三颗
Egg x 3
白米 三杯
Rice x 3 cup
香兰叶 一把
Pandan Leaves x1
两汤匙白糖
2 tablespoons of sugar
一茶匙盐
1 teaspoon of salt
一汤匙酱油
1 tablespoon of soy sauce

步骤
1.倒入水先把蒸锅预热
Pour in the water to preheat the steamer
2.准备三杯白米,开始洗米
Prepare 3 cups of white rice and start washing the rice
3.把白米倒入蒸锅并且铺平
Pour the white rice into the steamer and and spread it flat
4.并用手指插出几个孔
And insert a few holes with your fingers
5.开始煮半个小时
Start cooking for half an hour
6.清洗阿三果皮
Clean Asan Peel
7.倒入一杯水把啊三果皮泡半个小时
Pour a glass of water and soak the peel for half an hour
8.撕开香兰叶并打结
Tear the pandan leaves and tie them
9.倒入食用油开始炸花生
Pour in cooking oil and start frying peanuts
10.清洗江鱼仔,倒入油开始炸江鱼仔
Cleaning the anchovies, oil began to pour and fried anchovies
11.红葱头和蒜米屑皮切碎
Finely chop the shallots and garlic
12.继续使用刚刚炸江鱼仔的油,开始爆香红葱头

20.加入两汤匙白糖

21.加入大葱继续爆香
Add Yellow Onion and continue to saute
22.加入一汤匙酱油调味
Add a tablespoon of soy sauce to taste
23.放入一张纸进蒸锅准备煮鸡蛋
Put a piece of paper into the steamer to prepare the eggs
24.水滾三分钟后就可以关火焖十分钟
After the water boils for three minutes, turn off the heat and simmer for ten minutes
25.半小时后打开刚刚煮的白米饭
After half an hour, turn on the freshly cooked white ricefor ten minutes
26.椰浆加入两茶匙盐搅拌均匀
Add two teaspoons of salt to coconut cream and stir well
27.一边搅拌米饭一边倒入椰浆
Pour the coconut cream while stirring the rice
28.确保椰浆完全覆盖米饭
Make sure coconut cream completely covers the rice
29.加入香兰叶,并用手指在米饭上戳洞
Add pandan leaves and poke holes in the rice with your fingers
30.继续煮半个小时就完成了!
