陳奶奶這次帶來印尼最經典的辣椒醬-叄峇辣椒醬,
是印尼人最常使用的辣椒醬,蝦膏加上辣椒又香又辣,惹味非常。
源自正宗的老食譜,材料簡單又易做喔!

材料:
指天椒(朝天椒), 磨碎 500克 (取其辣味)
大尖椒, 磨碎 500克 (取其甜味)
馬拉盞蝦膏, 烤至略焦 2片 約10克
鹽 5克
冰糖 2.5克 加水溶化

【English Recipe】
Grandma Chan would like to share with you Sambel Trasi, the classic Indonesian shrimp paste chilli sauce.
An old and authentic recipe with simple ingredients that are easy to make!
This is the most common chilli sauce used in Indonesia. The shrimp paste and chillies make it spicy and so aromatic.

Ingredients:
Facing heaven pepper, ground, 500g
(You can substitute with other high-heat chilies, such as Rawit red chili , Bird's eye chili)
Cabe Chilli Pepper , ground, 500g
(For sweetness. You can substitute with other mid-heat chilies, such as Cowhorn pepper)
Trasi (or any another shrimp paste such as Malaysian Belacan) approx. 10g
Salt 5g
2.5 g rock sugar, dissolved in water
