Thanks for this video, as I always enjoy your program. Talking about name of the dishes, maybe there is a close connection with China. Here is my understanding, after WW II, Japanese civilian were sent back to Japan, make a living at that time is difficult for these people, some of them start selling Chinese dishes (most are northern China style they learned while at China). Have you ever heard of 天津饭? My friend form Tianjin has no idea about this, but you can find it Japan. Maybe this is an area you can dig into.
