【芋头饭】Taro Rice
芋头饭是一道福建社群的美食,马来西亚福建菜的 “色系” 就是【乌】所以,这锅饭也不例外,就是以【乌】为主色系 ^O^
一锅饭里头,用料十足,有猪肉和芋头,单单这两样食材就非常有饱足感。可能是因为,早期南来的福建人都是从事劳力工作,如码头苦力工人,必须消耗大量体力。因此,必须吃得饱饱的,才有力气工作。本人父亲早年也是苦力工人,非常劳累的工作。想当年,能够吃上一碗这样的芋头饭是多么的奢侈啊!
其实,今天的食材样样都很贵!葱头仔、蒜头、芋头、鱿鱼片、虾米、香菇。。。 每一样都是贵货!贵贵贵!!
如何把饭煮得香气四溢呢??必须依序爆香:葱头仔、姜片、鱿鱼丝、虾米、蒜米、香菇、肉片(细节请参照影片)跟着这样的做法,工序繁琐耗时,但煮出来的芋头饭,绝对让你垂涎三尺,连吃上三餐都不厌倦!

1)芋头 | Taro - 300克 | 300g
2)蒜米 | Garlic - 2~3汤匙 | 2-3 Tbsp
3)姜片 | Ginger Slice - 4~6片 | 4-6 Pcs
4)葱头仔 | Shallot - 5粒 | 5 Pcs
5)鱿鱼干 | Dried Squid - 40克 | 40g
6)虾米 | Dried Shrimp - 1汤匙 | 1 Tbsp
7)猪肉 | Pork - 300克 | 300g
8)香菇 | Dried Mushroom - 6朵 | 6 Pcs
9)米 | Rice - 3杯 | 3 Cups
10)清水 | Water - 4.5杯 | 4.5 Cups
猪肉腌料 Pork Marinate
11)胡椒粉 | White Pepper Powder - 少许 | Few Dashes
12)生抽 | Soy Sauce - 1/2汤匙 | 1/2 Tbsp
13)麻油 | Sesame Oil - 1/2汤匙 | 1/2 Tbsp
14)玉蜀黍粉 | Cornstarch - 1茶匙 | 1 Tsp
米饭的调味 Rice Seasonings
15)黑酱油 | Cooking Caramel - 3汤匙 | 3 Tbsp
16)蚝油 | Oyster Sauce - 2汤匙 | 2 Tbsp
17)生抽 | Soy Sauce - 1.5汤匙 | 1.5 Tbsp
18)盐 | Salt - 1/2茶匙 | 1/2 Tsp
【Taro Rice】
Taro rice is a delicacy of the Fujian community in Malaysia. The "color scheme" of Fujian cuisine in Malaysia is "Dark". Therefore, this pot of rice is no exception. It is based on "Dark" color series ^O^
The rice in a pot is full of ingredients, inclusive of pork and taro. These two ingredients alone are more than enough to make you feel full easily. Those Fujianese who came to the south in the early days were all engaged in labor work, such as dockers, who had to consume a lot of physical energy. Therefore, you must have heavy food to have the energy to work. My father was also a coolie worker in his early years and was a kind of very tiring work. I think back then, how luxurious it was to be able to eat a bowl of this kind of taro rice!
In fact, all the ingredients required today are very expensive! Shallot, garlic, taro, dried squid, dried shrimp, shiitake mushrooms. . . Everything is expensive! Expensive! !
How to cook rice so that it is fragrant? ? The ingredients must be sautéed in order: shallot, ginger slices, shredded squid, dried shrimps, garlic, shiitake mushrooms, pork slices (please refer to the video for the details steps by step ). Following this kind of method, the process is tedious and time-consuming, but the taro rice will definitely make you mouth-watering. I don’t mind eating this taro rice whole day long for three meals!
