Use a computer fan and glue two magnets to each side of the fan center onto the blades. I bought one on Ebay and when i opened it i figured how easy they fooled me by charging me 50 dollars for something that was worth 10 ;-)

LATE comment here, but why ramp up the starters? I'm new at this so beginner question. No matter how small a slurry I define in a calculator, the result is always enough with a 3L starter. Is it more healthy for the yeast to ramp up?

This was drags from bottles that haven't been stored cooled. I ramped up to be sure the yeast worked and to make it easy for the yeast.

Hi dr Hans, i have one question for you .. it is related to yeast harvesting and starters...So, i harvested weihenstephan wheat yeast from 4 bottle of our domestic local mini brewery... i multipli that yeast with 2 starters ... And finally i always try my starters when i cold crash them according to your advice...This time my starter taste a little bit sour , but banana is there ofcourse... Should i use that yeast form my batch of beer ? i know that yeasts for wheat beer gives a litlle bit sour taste ...Do you know which yeast they in STIEGL use ? And was your starter a little bit sour ?? ty , all the best :D

If in doubt don't use it. Starters have a bit special taste to them but sour no. It sounds like you have an infection in there. I don't know which yeast they use. That's why I harvested it. Cheers Buddy

Fantastic job, so worth the effort. The first beer I have made that is worth drinking is from yeast harvested from hoegaarden - I'm drinking it now as I watched this. You do make an extra effort with everything you do, very impressed. I would like you to try one of my Witbier and get your feedback if you would do that? If so please PM me your address. Don't have the exact answer for that. But a very long time. You of course always will gave to make a starter to wake it up. Will do much more experiments with it in the future. Cheers

Hans, nice video, thank you! Can you please write the recipe here? What went into the wort, how much wort did you get and how much dextrose have you put in the wort before bottling. If any. My friend and I just made dunkel weizen and aren't satisfied with the sourness that might have come from the yeast. We used 11.5 grams of dry wb-06 to 28 liters of wort. Everything looks nice, the head is just as yours, the body is great, color too but it just has that sour aftertaste that we don't like. Tell me, is it necessary to do a two-step starter? Can I do a 1.5 liter starter with just four bottles of high quality weizen? Thanks!

veltruski Hi there and Thanks! I dont have the recipe. Lost it when updating my computer. I always use at least 50% wheat in my whetas. So ill guess it was something like this 40% wheat malted, 10% unmalted wheat. 45% pilsner malt, 5% Carahell. Hops might have been Green bullret @60 and a late addition aswell. Or mabey Magnum for bittering and tettnager for aroma. This was forced carbed and bottled from the keg so no priming sugar where used. I Woulld have used double that amount of yeast if I where you. You might be fine with not doing a two step starter. I did it because im trying to make the best beer I can. I have used WB-06 aswell in the plast and I also have found a Trang that I did not like. But if your beer turned out sour it sounds like you got an infection. Tempcontroll may also be a factor. Cheers!

Great video, your best so far from my point of view! :P The part of the harvested yeast you saved in the small glass can, do you just save it in the fridge and for how long could it last there before you use it? Do you care to share the recipe? 😛Keep up the good work you do! Cheers!

Thank you! Glad you liked it. Well for a very long time to be exact :D I think this video is very much about just that as I ramp the starter. If the yeast were very old you should do just that. I only save yeast I intend to brew with regularly. Heres the recipe, half from memory, but its very close at least. The Thief By DrHans Brewery OG 1043 FG 1015 ABV 3,7% IBU About 10 Wheat Malt 50% Carahell 6% Vienna 10% Pilnser Malt 30% Melanoidmalt 4% Mash 50-53C 15-20min 67C 75min 75C 10min 60min boil Hops: Gren Bullet 60min addition and 15min addition (totalt to about 10 IBU) Starter 1500ml starter decanted, yeast STIEGL Ferment start at 18C Start ramping day 2 0,5C every 12 hours Place beer at 24c ambient temp after 50% attenuation. When stable SG and beer tasts fine: Cold crash down to 0c beer temp then keg.
