🥐 Bagel dough:
100 ml milk (5 fl.oz)
20 g fresh yeast (1 oz)
500 g flour (17.6 oz)
2 g salt (pinch)
50 g eggs (1.7 oz)
300 g frozen butter (at least 82% fat) (10.6 oz)
100 g sugar (3.5 oz)
300 g jam (10.6 oz apricot, apple or plum)
50 g icing sugar (1.7 oz)
🥐 Make the dough.
1. Combine warm milk and yeast, stir to dissolve the yeast. Leave the dough in a warm place for 30-40 minutes.
2. Combine the dough with the egg, stir.
3. Grate the butter on a fine grater, dipping it in flour. Mix the grated butter with flour to make a crumb.
4. Add the egg dough and knead the dough.
5. Divide the dough into small pieces, wrap with cling film, refrigerate for an hour.
🥐Prepare bagels.
1. Turn on the oven at 170 ° C (338 F), convection.
2. Roll out each piece of dough in turn, sprinkle both sides with sugar.
3. Cut a 20 cm (7.9 inch) circle from the rolled dough and cut it into 8 triangles.
4. Place jam on the wide side of each triangle and wrap the bagels.
5. Send the bagels to bake in an oven preheated at 170 ° C (338 F) for 15-20 minutes.
6. Sprinkle the finished bagels with powdered sugar.
