If this is the common white variety from Mexico it’s known as Hylocereus undatus … his yellow variety is most likely from Columbia and known as Selenicereus megalanthus… it’s a small fruit and indeed is self pollinating and takes over 120 days to mature… there is a larger yellow variety of the same species from Equator known as the Palora from the city of the same name…. Go on KZitem and view “ Kim Phan Dragon Fruit “ for some excellent videos and knowledge.

Yes, this is the Colombian species. Small fruits , some bigger than the ones shown here. 👍

If I cross pollinate. Yellow dragonfruit with pink , will the fruit change colour.

No it’s not … Mexico is in Mexico and Central America is in Central America… you know Frogs are frogs and Toads are toads … if your lucky these two different, but similar… sometimes they will cross pollinate.
