Extremely healthy, super yummy and super quick with minimum ingredients Yogurt gravy with spinach and seasoned with salt and basic herbs and spices.
Ingredients (serves 4)
Regular Curd or yogurt unsweetened unflavored 2 and half cup
Spinach Around 150 gms
Gram flour half cup
Salt to taste
Turmeric powder 1 tsp
Spice mix. Chaat masala, black salt roasted cumin seeds powder half teaspoon each and one teaspoon of dry mango powder. Mix everything well and keep it aside.
For seasoning
Garlic 4-5 cloves finely chopped,
Green chillies chopped (optional).
Kashmiri Redchilli powder 1 tsp. (Adds to the color and flavor. Not spicy)
Water as per the thickness of the curd. (As shown in the video)
Recipe.
1. Mix curd and gram flour, salt and turmeric powder and mix well to make a lump free paste. Add water to make a flowing consistency batter as shown in the video. Turn on the gas on high flame.
2. Keep stirring continuously until it comes to a complete boil. Otherwise our yogurt will curdle and spoil the entire dish.
3. Now add spinach to the batter and mix it well. Also, add the spice mix that we had earlier made to the batter. Cook on medium flame until spinach is well cooked and the gravy is at a desired consistency (as shown in the video). This should take around 5-7 minutes.
Tampering. Heal tablespoon of oil in a small pan. Add garlic and green chilies (if using) and roast until they have changed color and add Kashmiri Red chilli powder. Add once done to our gravy. The gravy is ready to serve. Enjoy with steamed rice or bread.
