It's so nice that you are getting on so well together. I know Josh's an introvert like me and I know how exhausting it can be to be with others nearly 24/7 for such a long time. But when you find the right person(s) to travel with it just great and you are having the best time. Finding such persons is a true gift and it makes me very happy to see two of my most loved travel vlogger couples having such an awesome time together.

there's a lot of hamlets in england. every town or village ending with 'ham' in england is a hamlet or used to be. and places ending in 'ford' has or used to have a river that you can cross on foot

I read once that a hamlet typically only held the houses of the workers from one farm, so usually smaller than a village.

Even though NZ is our little brother and our best friend (speaking as an Aussie) even we're amazed by all their crazy sports.They love jumping off bridges. You should try pineapple lumps and L&P (A lemon drink) whilst there - they go wild for that stuff.

You can go visit all these countries... Act all sophisticated at the French Riviera, visit the Colosseum in Rome, the pyramids in Egypt, take in a show on Broadway, or afternoon tea at Buckingham Palace, but ultimately, all you REALLY want to do is go down a mountain in New Zealand on a cart!

Always sear your protein it adds so much flavor and at the end of cooking let your meat rest for a good five to ten minutes to let all the juices go back in to the meat

Liking new intro Bravo for attempting lamb. Shoulder is a pretty tough cut-better for stewing or long cooking My mama always taught me to heat my pan, then add fat, next meat( blotted with paper towel to dry off any moisture ) Let it brown really good on one side before turning. Searing = browning almost severely! (Any kind of meat) For chops -brown both sides and if not cooked through , lower heat and finish cooking. I love to grill lamb on the bbq Continued safe travels... i would have put the chops in the pan on the stove top with a little oil and cooked them , i like my lamb chops with a little colour on them on the out side ,and a big dollop of tomato sauce or as you call it ketchup.

I think searing the meat before putting it in the oven seals in the juices. It was good to see Josh had a break from driving (he has been a trooper since the Hawaii vlogs), and I'm happy none of you broke anything doing the mountain carting (especially Eric) :D

Yes, that's the idea, but those shoulder chops didn't get browned enough for that to happen. It's not really Alison's fault, she was working with a non-stick pan and they just don't brown things very well. Also, that cut of meat is *tough* and needs a long, moist cooking method to get tender. Cooking them in foil pouches (with a little garlic, butter, a shot glass of red wine, salt and pepper for an instant sauce) would have worked a little better, IMO as a retired chef. Pouches would have kept the vegetables from drying out, too.

Hi Eric and Allison! Would you like to visit some vineyards in NZ? I recommend 'Two Paddocks' near Queenstown in Central Otago. It's one of the best Pinot Noir in the world, but they have some awesome whites as well. It is owned by actor Sam Neill, who portrayed Dr. Alan Grant in the Jurassic Park series. You might bump into him when you visit.

Mint sauce will salvage just about any failed attempt at cooking lamb, especially a decent brand like that one. But hopefully it was delicious for you regardless! :D

As a Kiwi, I'm glad you guys had a great time at Cardona and the Mountain carting been there done it, yes need to get up there early 4 hrs will really exhaust you by the end of the day,, Those lamb chops look awesome Allison, you guys should have done a Marae Visit and meet the locals, the sounds will blow you away with the views..No spoilers!!

Tip for when cooking lamb: put some rosemary on it! I usually just pan fry it and add rosemary along with some other seasonings and it’s amazing!

It looks as if your lamb has died twice. Once at the slaughter and twice in your oven. Next time just use a very hot pan to fry it in oil for just a few minutes and afterwards have it rest in the oven for 10 minutes at a very low temperature (80°C/175°F).

I believe my mother use to kinda stew lamb, sear it first then cover it thicken the sauce with Bisto . I stopped eating meat due to diverticulitis condition but lamb was a favorite. Bet it came out good baked liker that. thumbs up on the video.

Have you been to Queenstown yet? If not, do the luge while you're there - same idea as the carting but lower to the ground and in the middle of the city instead of the middle of nowhere. (At the top of a hill with great views of course!)
