Ingredients:
1/4 cup of Chili Powder
1 large white onion
1 head of garlic
1 bunch of cilantro
Olive oil
1 quart of chicken stock
1 tablespoon of Sugar
3 tablespoons of flour
1/2 quart of water
1 teaspoon each of coriander, cumin, smoked paprika, salt, pepper, and Mexican oregano
a tablespoon or so of semi-sweet chocolate
3-4 chicken breasts
10 flour tortillas
several large amounts of cheese (I use pepper jack)
Steps:
1. Rough chop the garlic and onion and roast under the broiler for 20 minutes or so until you have a little bit of charring.
2. Using a food processor, blend together the garlic, onion, a small bunch of cilantro, a tablespoon or so of olive oil, and a splash or two of chicken stock until it's well mixed and has a paste like quality to it.
3. On the stove, in a large pot set to medium heat, add three tablespoons of olive oil and three tablespoons of flour.
4. Mix them together until the raw flour smell is gone, and mix together with a little bot of the chicken stock until it becomes thick like a gravy.
5. Now is the time to add the garlic/onion paste and the 1/4 cup of chili powder, followed by a teaspoon each of Mexican oregano, cumin, coriander, salt, pepper, and smoked paprika.
6. Mix it together and add the rest of the quart of chicken stock and a half quart of water.
7. Add a tablespoon of sugar and the chocolate (optional). Let it melt and incorporate.
8. Either in the sauce you made or in additional sauce mixed with your own, boil 3 - 4 chicken breasts until they reach an internal temp of 165F.
9. Remove the chicken and shred them, along with some cheese.
10. Once your sauce has cooled a little, spread some sauce into a baking pan, dip your flour tortilla into the sauce, coating on both sides, then fill with chicken and cheese. Wrap it and add to the baking pan.
11. Do the same with the rest of the tortillas, and once they're all in the pan together, top with a little more sauce and a little more cheese.
12. Let them cook in the oven at 375F for 20 or so minutes until the sauce is bubbly and the cheese is melted.
13. Serve with avocado salsa, sour cream, and if you want, a little bit of rice and beans.
